Loaded Oatmeal Cups
Serves: 28-32
  • 5 cups old fashioned oats (NOT the quick 1 minute oats)
  • 2 cups chopped pecans
  • 1 cup grated zuchinni, squeeze out excess water
  • 1 cup brown sugar
  • ½ cup ground flaxseed
  • 1 tsp salt
  • 1 Tbsp baking powder
  • 1 heaping Tbsp ground cinnamon
  • 2½ cups whole milk
  • 1 cup applesauce
  • 1½ cups chocolate chips
  1. Pre heat the oven to 350* Line two cupcake pans with liners
  2. Put all of the dry ingredients into the bowl -- give it a good stir and let everyone mingle.
  3. Add the applesauce + milk stir until combined.
  4. Let the oat mixture sit for about 3-5 minutes, to soak up some of the milk.
  5. Fill each cupcake liner with your loaded oat mixture, just to the brim. Bake for 15-20 minutes until they are set and slightly golden on top.
  6. Take out to cool and store in an airtight container or a ziploc bag. At room temperature for a few days, or in the fridge for up to a week.
  7. You can even freeze them in gallon freezer safe bags to keep them on hand to microwave in the morning!
