This is a blog post in collaboration with Honeywell. The Thome Home was gifted the product to try at home, and we are so happy with the results we had to share our experience with you all!

Every single day I do my best to create the safest and healthiest environment for our children. And, listen folks – it isn’t easy. At all! Both of my boys have compromised immune systems and they catch a cold faster than a a bridesmaid diving for the bouquet. After five years in our home, and experiencing a multitude of environmental triggers to both of our boys health, we were left scratching our heads with the question …

What else can we do? What are we missing?

We may not be able to control what our children may encounter outside of our home, but if we can improve in any way the quality of the spaces that we spend the majority of our time in, sign me up!

Honeywell Air Purifiers, welcome home

After a few appointments with Owen’s allergist and pulmonologist, they both chimed in to say that we should really consider bringing in some form of air purifying system into our home. Hours of researching, I stumbled across Honeywell. The #1 recommended air purifying systems by allergists, that is a huge key in overall well being for asthma and allergy sufferers. Honeywell offers a wide range of air purifiers, different sizes and styles. Did you know their air purifiers capture up to 99.7% of microscopic allergens in the air?! How wild is that!!

We decided to bring in 3 larger systems into our home

We decided on this model, one for each floor of our home and decided to rotate them as needed from room to room every few days. We were hopeful it would make a difference, and after one month of using these air purifiers we are absolutely speechless at the results we have experienced.

  1. Within two days of use, there was a dramatic difference right away in the dog odor that notoriously lingers in a house with pets. You know that wet dog scent that can linger on furniture or greet you upon entering a home? Yep- GONE!
  2. After one week, there was a noticeable difference in the quality of air we were breathing in. Rooms that felt musty, or held onto dust more than others, no longer had that “thickness” to the air and the dust gathering decreased greatly. It is truly remarkable!
  3. Most importantly, Owen’s asthma issues have improved! He even says how his bedroom just “feels better” and I know that is because he is coughing far less, if at all! It has been such a huge relief to know that the air that he is breathing in while at home is being filtered and purified.

We now have had these three units in our home for over a month and can honestly say we are completely smitten with Honeywell. It’s so comforting knowing that pollen, dust, pet dander and more are all being trapped inside their powerful Hepa filters.

There are multiple settings, one for “germ”, “general clean”, “allergen” and “turbo”- all of which have this relaxing white noise upon turning on, and you can set the time frame in which the system runs for. I tend to run each of ours on general clean in the morning for a few hours, and then switch to allergen for a few to really kick things up a notch! Owen prefers the allergen setting, and will keep his on throughout the night

Simple Shrimp Paella

Simple Shrimp Paella

No need to sit and stir for hours on end to achieve an incredibly flavorful paella! Never have I ever made paella, however, I have made a plethora of one pot rice dishes and it baffles me that I never attempted a simple paella recipe. This was so simple even Dan was baffled that it only took 45 minutes start to finish to pull off a dish that tastes like I worked on it for hours.

Well, here it is folks…

 In less than one hour, using a cast iron skillet or dutch oven, and a few key ingredients, you’ll be well on your way to bringing a dish to the table that will wow your guests.  Layers of flavor are built with chicken sausage, aromatic spices and toasting long grain rice.  Simmering everything in together with a combination of chicken stock and diced tomatoes and chilies, this rice wonder is then finished with plump shrimp to take everything over the edge. 

Pair it with …

Serve with salad and a crisp dry rose or a medium bodied red wine will pair perfectly with this shrimp paella.

Simple Shrimp Paella 

1 cup long grain rice

2 cup low sodium chicken stock

1 10oz can diced tomatoes & green chilies

1 onion, diced

1 12oz package of sweet Italian chicken sausage links, cut into coins

8-12 large raw shrimp

1/2 cup frozen peas

1 tsp kosher salt

1/2 tsp ground pepper

1 tsp smoked paprika

1 tsp turmeric

1 1/2 tsp garlic powder

Extra virgin olive oil, as needed 

In a cast iron skillet, oven medium heat, with a tablespoon of olive oil, sauté the chicken sausage coins until they are caramelized.  Remove sausage from pan, and set aside on a plate.  Add another tablespoon of olive oil to the cast iron skillet and sauté onion until translucent.  Next, pour in the cup of long grain rice, along with the salt, pepper, smoked paprika, turmeric and garlic powder.  Stir for just a minute or so to incorporate the spices and toast the rice.  Add the can of diced tomatoes & chilies, along with the chicken stock and sausage.  Give everything a good stir and simmer for 10 minutes.  Stir in frozen peas, and place raw shrimp on top the of rice in a circular pattern.  Turn heat down to medium-low, and simmer for an additional 25-35 minutes, or until all liquid is absorbed and shrimp is nice and pink.  

Serve while warm! Enjoy!

Friday Round Up

I racked my brain for a creative title to this new series on the blog, and with the current state of how I am feeling, well, you’ve guessed it. Writers block. Welp! Hit me with your suggestions, Fridays on the blog from here on out will be a round up of everything from the past week I want to share. Whether it be a project we are working on, family happenings, recipes or sales that I cannot keep from putting into my shopping cart. ALL the good stuff, ALL in one pretty little post.

Crew …

Well, this morning was interesting. Brody had a minor meltdown before school. He mentioned that 5 kids went home sick in the middle of the day yesterday, and he said he felt really worried that he was going to get sick next. It’s tough at this age, (few days away from 11!) He understands his Ulcerative Colitis and how comprimised it makes his immune system, but take that and add on everything else going on in the world, on the news, I could tell his little head was spinning and it broke my mama heart. On a positive note, his birthday is SUNDAY! My first born will be 11 and I cannot stop grinning thinking about how much I love that boy! We’ll be spending the weekend celebrating and soaking it all in as a family, because whoosh – time flies.

Homebody …

I tried my best to share the master bedroom progress via Instagram stories this week even through I was beyond under the weather. It is not in my nature to really let go and relax, but this virus left me with no choice. Day 6, and still not better, BUT – this master bedroom, babes …. So far, it is looking SO good! This weekend we’ll be adding all of the finishing touches, but keeping it clean and simplistic –

Let’s Eat …

What a lame week for food (whomp whomp). With a next-to-nothing appetite, the kids were treated to spaghetti, taquitos and Mac and cheese to get through the week. Of course, our daily after school snack boards are a total life saver, you can always catch the daily spread on my IG stories! To make up for the lack of recipe content this week, I have a full roster coming at you all next week and I am so excited to get it going! In the mean time, warm yourself up with my soup for the soul Vegetable Wild Rice Soup. You can add shredded rotisserie chicken too if you give a cluck 🙂

Greek Hummus Dip + Greek Mix

A fresh and healthy blend of tomatoes, green olives and cucumbers that can be used in a ton of different ways!

Our Greek Hummus Dip recipe goes wayyy back! It started as an excellent healthy option to bring to family gatherings, one that everyone went crazy for! After a few times of making it, I quickly realized that I should make the topping of the dip separately and keep it on hand to use in salads, wraps, dips and more – it adds so much flavor to every dish!

The Greek Mix recipe that is now considered a household staple, one we like to make a few times a month and keep it in the fridge, and used just as often as a condiment. Zero cooking required! You simply chop up the vegetables and olives and create a delicious bright dressing and you can store in the fridge to use how ever you wish!

  • Greek Salad : Romaine, shredded grilled chicken, greek mix, feta cheese and a balsamic dressing
  • Greek Grain Bowl : Prepared Quinoa, falafel or grilled chicken, greek mix, dollop of hummus, feta cheese + extra lemon juice – dressing of choice
  • Greek Wrap : Toss a spring mix with Garlic Expressions salad dressing Smear the bottom of a tortilla wrap with any hummus you like, top with spring mix, choice of protein (chicken, falafel etc) and top with greek mix + feta cheese
  • Greek Hummus Dip : For party size, spread 2lb of hummus onto the Bottom of a serving platter. Pour Greek Mix on top, try not to include the juices – and top with feta cheese. Serve with pita, naan bread, and veggies
  • Snacking : Simply keep the greek mix in the fridge in an airtight container, scoop portion of hummus and top with greek mix and feta cheese for a healthy light snack

Greek Mix

  • 1 seedless cucumber (2 cup), seeded and quartered
  • 2 cup grape tomatoes, quartered
  • 1 cup green olives, halved
  • 4 Tbsp Apple Cider Vinegar
  • 2 Tbsp Extra Virgin Olive Olive
  • Juice of 1 lemon (add zest too if you’d like!)
  • 1 tsp Garlic Powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Simply toss all ingredients together in a bowl. Store in an airtight container and keep in fridge for up to 4 days.

Master Bedroom Vision Board

It has been nearly six years since our master bedroom was featured on Wayfair!

Just a very large master bedroom with original everything from the 70’s –

It’s simple before and after images had so many views it left me scratching my head as to what really was drawing people in? It was not an expensive makeover, the furniture was half hand-me-down half new. It took me years to figure out why such a basic room makeover left such an impact on its viewers. All of the things that made me feel a bit self conscious about submitting the content (worried it wasn’t enough of a “WOW” factor) were the exact reason why it was so popular. It was relatable!!

It was affordable, it was tangible, and it was a room that so many of us often neglect.

Master bedrooms are forever the space that turn into a strange mix of new and old that is not intentional, so most of the time it never goes together. A room that is just thrown together with the essentials, because after all, we just sleep there, right?

WRONG!

Time spent in our master bedrooms is far greater than any of us realize. Sleeping 6-8 hours a night is obvious, but think about getting ready morning and night. Doing chores, folding laundry, relaxing or just unwinding before you go to bed. This room is more than likely the very space you go to as a retreat, and this space should feel welcoming and comfortable to be in for whatever time frame that is!

The amount of messages that flooded into my Instagram when I announced this makeover and revealed what our current space looks like, was crazy! Immediately we bonded over the fact that the majority of us are grown-ass adults still neglecting our master bedrooms!

It’s time to give our masters some T.L.C.

At first, I planned to purchase a new bed. After searching and searching, I quickly realized how silly it was to replace a piece in our room that is in perfect condition and is so comfortable. Why take the risk ordering new bed, only to be disappointed? I decided to take a bit of the bed budget and just move it towards the rug!

Legacy Village Family Snow Day!

Legacy Village Family Snow Day!

This post is in collaboration with Legacy Village, located in Lyndhurst, Ohio.

I remember the very week that Legacy Village in Lyndhurst, Ohio officially opened. I lived only a few miles down the road, and was a bright-eyed bushy tailed high school student who had all of her babysitting money in her pocket ready to shop! I remember the excitement of pulling into the center in my Mazda and feeling like I just entered a different world. A shopping and dining center that is laid out so beautifully. Truly, a get-a-way in the middle of a suburb! Still, nearly 20 years later – Legacy Village still holds the very same magical feeling! It emcompasses an entire experience, and offers its guests endless options to enjoy with every visit.

What better way to spend a snow day than to take the kids on an adventure in Legacy Village? Inches of snow had fallen the night before, and we surprised the kids with a day spent at Legacy Village! We were on a mission for new snow boots, and figured we’d stop for treats and a lunch date – ending with a sunset sledding session back at home! It was such an incredible day spent with the boys – just take a look!

First stop was Dicks – Dick’s Sporting Goods for my kiddos is heaven on earth. Max immediately gravitated to the snow-toys that were right in the entry way, and then the boys eyes expanded twice their size when they saw the escalator. “A TWO STORY SPORTS STORE!?” – my boys

Picking out snow boots was a total cinch at Legacy Village. We knew right off the bat we had a handful of retailers that we could visit to find just the right boots for the kiddos, we just didn’t know that Dick’s would end up being a one-stop-shop for them! It was perfect! They each found their size, and ran through the aisles to give them a good test run – it was adorable if I do say so myself.

Sweet tooth!

Owen had one store in mind he really wanted to check out – Rocky Mountain Chocolate Factory. From the candied apples, truffles and chocolate covered treats, these kiddos were drooling!

The staff at Rocky Mountain Chocolate Factory were incredibly kind and patient with our three indecisive boys! We left with two decadent candied apples, and chocolate covered pretzels – with plans to enjoy later during a family movie night!

Think we said no to this face?? Sure didn’t! Max received a gummy stick that even Willy Wonka would be envious of!

Coffee break!

An errand is never complete with a pit-stop to Starbucks, and we’ve officially reached the stage where the boys have their exact drink order request (yikes!)

You know this girl loves an esthetic. One of my favorite things about Legacy Village is its charm. The brick pavers, the black lamp posts, the contrasting brick and stone buildings. It’s a total gem!

Lunch break!

The California Pizza Kitchen was the perfect lunch spot to enjoy as a family! Their lunch options are fantastic, I enjoyed a salad and sandwich, Dan had a soup and sandwich and the boys tackled the kids menu like the bosses that they are! P.S. Right now they are offering a ANY pizza on their menu To-GO to take home and bake yourself for $5 when you order an entree. What an insane deal!!

After their bellies were full, it was time to hit the road and head back home to go sledding while the sun set! An entire day spent at Legacy Village with the boys, and they have already requested another visit to check out more stores and restaurants! Such a special day, full of smiles and memories to last a lifetime!

Mini Unicorn Pancakes

Mini Unicorn Pancakes

Add sprinkles, and they will come.

The amount of pancakes, waffles and bagels we go through in this house is unimaginable. Every week Dan is amazed how fast the massive grocery haul disappears by the end of week. As expensive as it is to feed a family of five, I try my best to recreate a few of their favorite breakfast items from scratch (even if they have added sugar) to feel better about what they are consuming on a regular basis!

Whipping up a massive batch is essential to stocking up your freezer making your time in the kitchen worth while!

**This recipe yields approximately 4-5 dozen mini pancakes, once they cool place them in a single Layer in a freezer friendly zip-loc bag and layer parchment paper in-between each layer to prevent them sticking together. When you want them, just pull them out and microwave until warmed through (1-2 minutes max!)

This is such a delicious pancake recipe that creates fluffy, buttery pancakes. Feel free to add your own mix-ins!

Ready to flip some flapjacks?

In a large bowl, whisk together all of the dry ingredients. Add buttermilk, eggs, vanilla and melted cooled butter and stir together until batter is combined and only small lumps exist. GENTLY fold in the sprinkles, just barely. They will start to seep color so do not stir aggressively, just a few folds and let it SIT until you are ready to scoop. Let the batter be uninterrupted 🙂

Heat non-stick pan over medium, with either a teaspoon of butter or a spritz of nonstick spray …

Using a cookie scoop (roughly 1 1/2 Tablespoons) dollop pancake batter onto skillet and press down slightly for mini circles. Once air bubbles pop in the middle of the pancake, flip over for an additional 30-45 seconds. Remove from skillet and let cool on cooling rack.

If freezing pancakes – see note above (**)

Pile them up high and drizzle with syrup, dip into yogurt or just enjoy alone. Your entire family will be sure to love this pancake recipe, and feel free to skip the sprinkles and add blueberries or chocolate chips!

Hand in hand – childhood emotional wellness

This has been an exceptionally hard road to navigate with my boys, but here are some of the things I have used to help ease their anxiety during flares with their illnesses.

Parenting is a challenging journey from day one. One ticket to the roller coaster ride of a lifetime of emotions : worry, excitement, pure joy and exhaustion. I’ve never quite experienced such an array of feelings on a daily basis until I became a mother.

What do you do though when that very same heightened sense of emotion is a trait that your children struggle with, particularly worry and anxiety? First, you take a deep breath, because, crap. It’s much harder to navigate than I had ever imagined.

You can trick your kids into eating veggies but you cannot trick your kids into ignoring their emotions

These are the things that I have learned that work for my kids over the years. This is my way of helping them cope with their anxiety. I am not a doctor (obviously) nor think this is a one way street for everyone. Hopefully you just enjoy this read, and perhaps find a way to put your own spin on one of my tips.

Number One: Don’t dismiss the way your child is feeling.

I learned this the hard way – I thought maybe at first if I did not dive too deep into acknowledging their anxiety or acting out due to it all it would help draw the attention away, and surely the moment would pass. WRONG – No matter the age, a child yearns for the validation over their emotions. That they are seen and heard, and are comforted in the fact that they can share how they are feeling with you 24/7.

Number Two: Plan of attack!

Teaching your child coping mechanisms is key! The benefits will not happen over night, for my boys it took multiple anxious bouts to learn that the few tips and tricks I provided them with to actually soothe them. Once they continued to use the tips they felt empowered by it all. I always start with deep breathing for them, instructing them to take 3-5 deep breaths in and out. Releasing those “yucky” feelings. Essential oil rollers have played a massive role into teaching my children how to combat their anxiety. I use a multitude of oils – some for asthma, belly aches, soothing lavender, whichever they chose. In that moment they feel empowered to take an oil, apply it and take control of what they are trying to ease.

Number Three: TALK it OUT

This will get repetitive, trust me. But think, even as adults we have moments of stress and anxiety revolving around the same issues (finances/work etc) that we ourselves circle around daily. So just imagine being a child, whom does not have the life experience to understand the scale of their worry and how help themselves. I can usually spot when the boys are going to go through a tough time. It’s nearly always right before, and during a flare of their health issues. Their entire childhood was spent in and out of hospitals and unfortunately a simple cold can quickly be associated with being admitted. Or hearing that a classmate threw up at lunch will spiral into B thinking that he will get the stomach flu and in return have his Ulcerative Colitis act up. They will not speak up guys, most of the time. So as much as you do not want to dwell, have them sit with you on the couch and talk it out. Having the power as an adult to explain or at least comfort them in understanding makes all of the difference.

Number Four: Fill Their Cup

Just as the same goes for us, make sure to help check off any box you know your child needs. Healthy eating habits, exercise, social time, alone time…etc. Emotions can run wild when we feel short circuited, so I always make sure to ask my boys what they feel like they need in times of acting out. Most of the time, its quiet time in their room, a moment to play outside dance party in the kitchen or a family board game. Help them to get their mind off of things, and these quiet moments can offer the perfect timing to have a heart to heart.

Helping provide your child with a few fundamental tips and tricks to aid in decreasing anxiety will give them the building blocks they need to be able to sort through difficult moments in life with confidence and compassion for others.

General Tso’s Tofu + Quinoa Fried Rice

General Tso’s Tofu + Quinoa Fried Rice

Toss that basic take-out order and whip yourself up something even tastier!

This dish blew my mind. I’ll admit, I had never tried tofu before. Not that I was weirded out by it, I simply try to not use too many meat alternatives. Well, well, let me tell you what – tofu is officially now my friend. I never knew the incredible crispy exterior you could achieve so quickly. How tofu can take on any flavor profile you wish, and just how delicious it truly is!

Today, I am bringing you a simple recipe that is packed with veggies and one that you will gladly skip the take out and make this instead!

Just look at the beauty on that plate! Sticky, crispy general tso’s tofu piled high onto a bed of quinoa fried rice. Come to mama.

There are two things you will need to do in advance to make this dish a total breeze to pull together. 1. Drain the tofu! Dry that baby out between a few paper towels or a kitchen towel, press it down with a heavy pan and remove the excess water. 2. Make the quinoa. It only takes 10 or so minutes, but once you have these two steps done the entire dish comes together in less than 20 minutes.

On you mark. Get set. Let’s Cook!

For the Quinoa:

1 cup Organic Quinoa

2 cup water

3 cloves Garlic

Quinoa Fried “Rice”

1 cup diced carrot

1/2 cup diced onion

1 Tbsp coarsely chopped chive or green onion

1 cup frozen peas

3 eggs

1 tsp sesame oil

1 Tbsp Rice Wine Vinegar

1 tsp Garlic Powder

2 tsp Sugar

1 1/2 Tbsp Low Sodium Soy Sauce

Prepared Quinoa (recipe below)

General Tso’s Crispy Tofu

1 package Extra Firm Tofu

1/2 cup Cornstarch

1 tsp Garlic Powder

1/2 tsp Kosher Salt

1/4 tsp Pepper

General Tso’s Sauce (1/2-1 cup)

**Prior to cooking, remove tofu from package and firmly press the tofu between a few sheets of paper towel or a kitchen towel to remove any excess water.  You can place the tofu on a plate, place a kitchen towel on top, and set a heavy dish on top to do the work for you! **

Quinoa:

In a medium sauce pan, bring 1 cup organic quinoa, 2 cups of water and 3 cloves of garlic up to a boil.  Once boiling, reduce to simmer and place lid on.  Simmer for 10-15 minutes until all liquid is absorbed.

Tofu:

  1. Take dried tofu, and slice into any shape you desire.  Strips or cubes –
  2. In a small bowl, mix together the cornstarch and spices.
  3. Coat the tofu evenly in the cornstarch mixture and shake off excess.
  4. In a sauté pan over medium-high heat, coat pan with a drizzle of olive oil and place tofu.  Watch carefully, rotating the tofu as each side becomes golden brown.
  5. Once all sides are nice and golden, coat the tofu 1/2 cup General Tso’s sauce, toss to coat and remove from heat.

Quinoa Fried Rice:

  1. In a large sauté pan, over medium-high, add a few teaspoons of olive oil. 
  2. Add the carrots and onions to the pan and sauté until onions are translucent (3 minutes). 
  3. Next, add the prepared quinoa, chives, vinegar, sugar, garlic, and soy sauce – give it a good stir for another 3 minutes.  
  4. Push the quinoa to the side of the pan, and crack three eggs into the open side of the sauté pan.  Whisk the eggs together to scramble.  Once scrambled, stir into the fried rice –
  5. Remove from heat and stir in the frozen peas.  

Serve this dish individually or family style.  Quinoa fried “rice” with General Tso’s Tofu, topped with finely chopped chives, sriracha for added heat and sesame seeds for crunch!

Baked Southwest Egg Rolls

Baked Southwest Egg Rolls

  For years these tiny parcels packed with dynamite flavor have continued to be one of the most requested appetizers within our circle of friends and family.  Another tried-and-true recipe of mine that can be made in advance and warmed through for a party.  Or, even better, baked and then frozen to be pulled out at your leisure to enjoy as you wish! 

These southwest egg-rolls are vegetarian, baked, not fried!

An excellent addition to an appetizer table that is yearning for healthier bite this new year!  Egg roll wrappers are filled with a vegetable and bean medley that is tossed together with an irresistible blend of spices.  Throw in some shredded cheddar cheese, roll them up tightly and baked until the egg rolls become crispy.  Dip into Heinen’s Mango Salsa, sour cream or guacamole.  One bite, and you will be well on your way to finishing the plate in front of you!

Baked Southwest Egg Rolls:

2 packages Melissa’s Egg Roll Wraps

2 (15oz) cans Heinen’s Sweet Corn

2 (15oz) cans Heinen’s Organic Black Beans, rinsed and drained

2 Peppers, diced 

1 cup Green Onion, diced

2 cup Organic Kale, chopped fine 

8oz Heinen’s Sharp Cheddar Cheese, shredded

1 1/2 tsp kosher salt

1/2 tsp pepper

1 Tbsp paprika powder

1 Tbsp garlic powder

1/2 Tbsp chili powder

1 tsp cumin powder

1/2 Tbsp Sriracha ( 1 Tbsp if you like it spicy!)

  1. In a large bowl, gently mix together all of the ingredients listed above (NOT the egg roll wrappers)
  2. Once all of the ingredients are incorporated and the spices have coated all of the filling, you are ready to fill the egg roll wrappers.
  3. First, line two baking sheets with parchment paper

Preheat the oven to 375*

**Fill a small bowl with cold water (this is the seal the wrappers)

**Egg roll wrappers are fragile, but there is no need to rush the process.  Once you open the package, cover the remaining unused wrappers with a damp paper towel.  This will keep the egg-roll wrappers from drying out and cracking.

  1. Lay an egg-roll wrapper onto a clean surface in a diamond shape.
  2. Scoop two tablespoons of filling into the center of the diamond, spreading the filling into a log shape horizontally, staying away from the corners.
  3. Dip your finger into the cold water, and wet all four edges of the wrapper.
  4. Fold the two outside corners over the middle of the filling.  
  5. Press edges down as they meet – 
  6. Take the bottom corner of the triangle and fold it over the middle of the filling where the two corners have met.  
  7. Tightly roll the wrapper forward, until the northern corner ends up being at the bottom of the egg-roll. See image below!
  8. Continue this process until all egg-rolls are filled, and placed onto the baking sheet.  
  9. Spray the tops of the egg-rolls with nonstick spray.

Bake at 375* for 12 minutes, flip over, and bake for another 10.  Flip one last time for 2-3 minutes until the egg-rolls are golden brown and crispy.  

Serve immediately with a variety of dipping sauces.  Or, let cool completely and freeze in a ziploc freezer-friendly bag in a single layer.  When ready to enjoy, simply bake at 300* until the southwest egg rolls have warmed through!
