Holiday Dinner Rolls

This recipe is in collaboration with Heinen’s Grocery!

Rustic, fluffy and smothered in melted butter – serve these beauties warm and your guests will be smacking hands out of the way to get their own. This is a great recipe to do with your kiddos too! Get messy, and have fun – do not sweat how the rolls look, they’ll be delicious!

Oh, and how can I forget this cinnamon vanilla butter these are served with. Have mercy, it is GOOD! A little nod to that Texas restaurant that has the sweet butter at the table, but I think this one with the warm cinnamon is even better!

Holiday Dinner Rolls

  • 2 envelopes of Rapid Rise Instant Yeast ( two 1/4oz packets)
  • 1 cup warm water
  • 2 cup warm milk
  • 8 Tbsp melted butter
  • 4 Tbsp sugar
  • 8 cup unbleached all purpose flour
  • 1 Tbsp kosher salt
  • -Egg Wash-
  • 1 Egg Yolk 
  • – For finishing the rolls-
  • 1/2 stick of butter at room temperature
  1. In a medium bowl, pour in the two packets of instant yeast and add one cup of warm water.  Stir gently and let sit for 5 minutes to activate the yeast.  You’ll notice it start to foam and bubble, and that means the yeast is activating!
  2. Next, in a large bowl, add the 8 cups of flour, salt and sugar, whisk together to fully incorporate 
  3. Once the yeast has bloomed, add the melted butter, milk and sugar – stir to combine
  4. Pour the wet ingredients into the dry, and mix for about 3-5 minutes using your hands or a wooden spoon until a dough starts to form, it will become less sticky as you mix the dough. Once everything is fully incorporated you will have a loose dough.
  5. Drizzle the top of your dough with olive oil, and cover the bowl with a towel and let the dough rise for one hour. 
  6. Once a dough has risen, give it one good punch in the middle and knead the dough for 2-3 minutes until the dough tightens up and forms a nice smooth ball.   If you’re dough its exceptionally sticky add a sprinkle of flour as you go.  

Now you are ready to make your dinner rolls!

  1. Pre heat the oven to 375*
  2. Generously grease a 9×13 baking sheet with butter
  3. Using your hands, grab golf-ball size portion of dough and roll into a nice smooth ball 
  4. Place onto the greased baking sheet, and continue rolling until you have filled the entire sheet.  The rolls can be placed tightly next to each other. 
  5. Cover the baking sheet with a towel, and let the rolls do their final rise for 30 minutes.
  6. Now, make the egg wash by whisking together one egg yolk.  Brush the tops of the dinner rolls with the egg wash, this will make them golden brown.
  7. BAKE at 375* for 20 minutes, or until just golden 

To finish,  I like to gently spread room temperature butter all over the tops of the rolls once they come out of the oven so that the butter gets into all of the nooks and crannies.

Best served immediately! 

Cinnamon Vanilla Butter

Double recipe for a crowd!

  • 1 stick unsalted butter at room temperature
  • 1/4 tsp cinnamon
  • 1/2 tsp vanilla extract
  • Pinch of kosher salt
  1. Using a handheld mixer, whip together the butter with the other ingredients until light and fluffy.

Halloween 2020

Halloween 2020

For years, Halloween was accompanied by freezing rain and winds beyond comprehension. This year, we had sunny skies, fair temperatures and it was on a Saturday – it was the ultimate trick-or-treating combination! Of course this perfect trio is paired with still being in a pandemic, but this was one “holiday” that I did not want the kids to miss out on. B + O have been inside the house since March, very little social gatherings (I can probably count them on one hand) and I wanted them to have a night running through the neighborhood without a worry – just have FUN!

Max changed his costume 5x during the month of October, so I knew better than to order anything. Spiderman was the costume of choice Halloween morning, and by lunch he decided he wanted to be Dash from Incredibles! Ha! Thankfully we had a top – and made it happen. Owen was Jason, how charming. Brody was a Blue Jackets player with a black eye and missing tooth – a glimpse at his future.

They put their masks on and tore up the streets for two hours straight. Max and I went to the houses on our street, who all just set candy out on a table, it was perfectly safe!

This year, we have all been faced with so many challenges. It really warmed my heart to see these three enjoying a night out without a worry in their minds. It was sweet, just like the pounds of candy they brought back!

Kitchen Renovation Finishes

Just one week ago our kitchen was demolished – we are still in the thick of the mess you see above except the windows are boarded up, nasty vinyl is torn up and there has been a ton of re-working havoc and plumbing since! Even more exciting, within 6-8 weeks the kitchen you see above will look a little more like this ….

Our crew, Alix Home Solutions is going above and beyond to ensure that every step of this renovation moves smoothly, they have been incredible! If you are looking to renovate a space in your home, make sure you give them a call and then them the Thome Family sent ya!

Now onto a few really exciting pieces of the kitchen Reno! The appliances we chose, lighting, flooring and cabinet finishes!

We decided to go with a black island, and creamy white base cabinets for the rest of the kitchen as seen in the lower right image. The flooring is an engineered hardwood. This was one item that we splurged on a bit.

The cost to and and stain the current hardwoods in our home, and then to run real hardwoods throughout was way out of our budget. So, we chose this gorgeous hearty oak flooring that has beautiful grey/black knotting to it.

The appliances had both Dan and I at hello. We were surfing through Sheely’s large selection of home appliances and the second we saw the color, and that they were Kitchenaid brand, we were sold! Without having upper cabinets, and having white subway tile to the ceiling, I wanted our appliances to add a little depth to the space, and think they will do exactly that!

Now as for the lighting. It did not have Dan at hello – at all. Haha! We bounced back and forth between pendants, flush mounted lights, just canned lights until our heads were spinning. Our ceilings are not high at all so the idea of a hanging pendant didn’t really sit well with us, we wanted a nice clear shot to the kitchen window. I told him, this was something he just needed to trust me with – I have a vision! The island is 9×4, so we will be placing two of these funky bulb pendants that hang tighter to the ceiling. There will still be a wow factor, all the while not obstructing any views!

Today we placed the order for the large window that will be center in the kitchen, and then the next few weeks will be bringing everything in! Ah! it’s kinda wild – never did I imagine we’d actually jump in and do this renovation, especially during a pandemic. But, here we are! Feeling so grateful, a little overwhelmed and just excited to have it done!

At the time I did not understand that my body was so out of tune that it was presenting in physical symptoms, that frightened me, so I was hyper-focused on how I was feeling all day, everyday.

After a year on anxiety medication, and a lot of hard work and reflecting, I quickly gained awareness of what it meant to have anxiety, and what my triggers were. My doctor explained it so simply “You would not deny a diabetic insulin, why would you deny someone with anxiety an SSRI?” I started a dose of Celexa, and have been taking it consistently (minus pregnancy with Max) since. Thanksgiving Side Dishes – Sweet Potato Casserole with Pecan Struessel + Spinach Gratin
Spinach Gratin – Cheesy, creamy – and oh so good
Sweet Potato Casserole with Pecan Struessel – fluffy, sweet and crunchy -YUM

Thanksgiving sides, are – well, let’s face it… are better than the Turkey. The sides are exactly what I crave each year and pile my plate high with. This sweet potato casserole dish is seriously the most requested dish that I bring to every holiday party. They are like fluffy sweet potato clouds topped with crunchy and sweet pecan crumble – it’s heavenly. The spinach gratin is a new one this year, and it’s literally Mac and cheese without the noodles. Creamy, cheesy, and packed with spinach, so hell, it’s good for you, right?!

Let’s whip these babies up, oh! And you can make these a day in advance and simply reheat on turkey day! “How easy is that?!” As the queen bee, Ina Garten would say, check out this video for a good giggle

I can’t handle her in the best ways – so unapologetic and just, well, INA.

Here are the two Thanksgiving side dishes you need to make this year!

Sweet Potato Casserole with Pecan Streusel 

  • 6 large sweet potatoes (or a dozen medium/small) 
  • 2 eggs
  • 1/2 cup melted butter
  • 1/2 cup half + half
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1 1/2 tsp salt
  • 1/2 tsp pepper 
  1. First, wash and dry the sweet potatoes
  2. Pre heat the oven to 375* 
  3. Place sweet potatoes on a baking sheet, and carefully poke a few holes into the skin with a fork
  4. Bake at 375* for 90 minutes – 2 hours, until a knife can be inserted all the way through with no effort, potatoes completely tender
  5. Let potatoes cool before handling 
  6. Slice open the sweet potatoes and scoop the inside out into a large bowl.
  7. Add the two eggs, melted butter, half + half, brown sugar, salt and pepper.
  8. With a handheld mixer, whip everything together until the sweet potatoes are light and fluffy (3-4 minutes) 
  9. Pour into a 9×13 baking dish 

Next, it is time to make the streusel topping! 

Pecan Streusel

  • 5 Tbsp melted butter
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 heaping cup chopped pecans
  1. Toss all of the ingredients together, until the a sticky crumble forms
  2. Preheat the oven to 400*
  3. Sprinkle the pecan streusel on top of the sweet potatoes 
  4. Bake at 400* for 30-40 minutes uncovered, until the streusel is golden and the sweet potatoes are bubbly hot!

Spinach Gratin

  • 4 packages of frozen spinach, thawed and excess water drained
  • 4 Tbsp butter
  • 1 large onion, diced
  • 1/4 cup flour
  • 3 cup warm whole milk
  • 1/4 tsp nutmeg
  • 1 1/2 cup shredded mozzarella cheese
  • 1 tsp salt
  • 1/2 tsp pepper

Panko Topping

  • 6 Tbsp melted buter
  • 1 1/12 cup panko bread crumb
  • 1/2 tsp salt
  • 1/2 tsp garlic 
  • 2 Tbsp parsley, minced

Pre heat the oven to 375*

  1. In a dutch oven, or large pot over medium-high heat on the stove, cook the onions with the butter until the onions are translucent and tender (8-10 minutes)
  2. Add the flour to the sautéed onions, and stir together for one minute
  3. Pour in 3 cups of warm milk, and turn the heat down to medium-low
  4. Add the salt, pepper, and nutmeg – stir to incorporate
  5. Turn OFF the heat, and add the mozzarella cheese.  Stir until the cheese has melted completely, and you now have a beautiful cheese sauce
  6. Add the thawed and drained spinach into the cheese sauce and stir to combine
  7. Pour spinach gratin into a greased 8×8 (or 9×9) baking dish 

Make the Panko Topping –

  1. In a medium bowl, mix together the melted butter, panko, salt, garlic and parsley until the panko is coated with butter and spices
  2. Sprinkle the panko topping across the entire spinach gratin dish
  3. BAKE at 375* for 30 minutes, until panko is golden brown and the gratin is bubbly

Fall Harvest Kale Salad with Candied Pumpkin Seeds and Maple Dijon Vinaigrette

Fall Harvest Kale Salad with Candied Pumpkin Seeds and Maple Dijon Vinaigrette

If there is one salad to pick to be the featured salad for your Thanksgiving table this year, it is this one.  Not only is visually stunning to set out amongst your holiday spread, but the flavors are phenomenal!  Sweet caramelized roasted butternut squash, layered with smoky crispy bacon, sweet dried cranberries and candied pumpkin seeds packs this salad with so much texture and zing.  Serve with crumbled goat cheese and the house-made maple dijon vinaigrette, a vinaigrette so good I may have to jar it and sell it! This salad is so over-the-top you’ll see the bottom of the bowl as guests race to fill their plate up! 

Fall Harvest Kale Salad

  • 2 bunches of organic kale, washed and finely chopped
  • 1.5lb butternut squash chunks, roasted (recipe below)
  • 1lb bacon, cooked and crumbled
  • 1/2 cup dried cranberries 
  • 8oz goat cheese, crumbled
  • Candied pumpkin seeds (recipe below)
  • Maple Dijon Vinaigrette (recipe below)

Roasted Butternut Squash 

  • 1.5lb butternut squash, peeled and cut into one inch cubes
  • 2 Tbsp olive oil
  • 1 Tbsp maple syrup
  • Good pinch of kosher salt and black pepper
  1. Preheat oven to 375*
  2. On a greased baking sheet, toss the butternut squash chunks together with the olive oil, maple syrup, salt and pepper.
  3. Bake at 375* for one hour, until the butternut squash is fork tender and the sides have caramelized a bit.  
  4. Set to the side to cool 

Candied Pumpkin Seeds

  • 1 cup pumpkin seeds
  • 1 egg white
  • 2 Tbsp brown sugar
  • 1/8 tsp cinnamon
  • Pinch of kosher salt
  1. Preheat oven to 300* 
  2. Line a baking sheet with parchment paper
  3. In a small bowl, toss together the pumpkin seeds with the egg white, brown sugar, cinnamon and salt
  4. Bake at 300* for 20-25 minutes
  5. Let cool completely, and then break apart into chunks 

Maple Dijon Vinaigrette

  • 3 Tbsp shallot, minced
  • 1/4 cup apple cider vinegar
  • 1/2 cup extra virgin olive oil
  • 2 Tbsp maple syrup
  • 1/4 cup dijon mustard
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper 
  1. In a large bowl, whisk all ingredients together until well incorporated.  Store in a mason jar in the fridge, and when ready to serve give it a good shake to re-combine.

Salad Assembly:

Put all of the finely chopped kale in the bottom of a serving dish.  Pour in a few tablespoons of the maple dijon vinaigrette and using clean hands, massage the dressing into the kale.  This tenderizes the kale best!

Next, add the roasted butternut squash, dried cranberries, crumbled bacon and candied pumpkin seeds on top of the dressed kale and finish with crumbled goat cheese.  Right before serving, pour the rest of the dressing onto the salad and toss to combine.

Pumpkin Pie Energy Bites

Trust me when I say, I will only bring forth the best pumpkin recipes you need this season. I’m not wasting my time with any half-ass recipes that are okay, or just good enough. If I’m jumping on the basic-blogger-train of sharing seasonal bites, they better be bangin’

Yeah, that’s exactly what these should be called! Bangin’ Pumpkin Energy Bites! 5 clean ingredients, no added sugar and you can store them in your fridge all week long for healthy snacking!

Pumpkin Pie Energy Bites

  • 2 cup old fashioned oats
  • 1/4 cup maple syrup
  • 2 tsp pumpkin pie spice
  • 3/4 cup almond butter
  • 1/3 cup pumpkin puree
  • (Optional) Dark Chocolate Chips, melted
  • (Optional) Sea Salt
  1. Grab a food processor and blend just the oats alone for 1-2 minutes, until it resembles sand, no chunks of oats!
  2. Next, add the syrup, pumpkin pie spice, almond butter, and pumpkin puree – blend until everything is fully incorporated
  3. Roll into bite-size balls, and put in fridge for 5 minutes
  4. Melt the dark chocolate chips, and drizzle the cold pumpkin pie bites with it, and top with sea salt – YUM
  5. Store in the fridge all week long!

You know I love a good chip. Like, it’s my greatest weakness. Love good bowl of chips at night with a glass of red wine and my favorite shows to wind down the day. Great Lakes Potato Chip Company has the most incredible never-ending flavors that are to die for! Our family favorites are the Sea Salt Pepper + Onion, and the Garlic Parmesan. Oh em gee, my friends …. so so so good!! We always have a massive stash underneath our bar in the basement for guests to enjoy!

Next on our favorites list, are Perfect Bars. These, I admit only Owen and I dig into – the other boys haven’t even given them a try. And honestly, I’m okay with that – I want them all for myself! Perfect Bars are packed with such nutritious ingredients, a super-food blend that gives these bars the added nutritional value you need! All the flavors are delicious, quite honestly! And, you can find them at Costco in bulk! These have to be kept in the fridge, so not a pantry staple, but a snack staple!

My boys (thank goodness!) still enjoy squeezable pouches, not the baby kind (ha) but applesauce, fruit mixed ones etc… These are our favorite! They are perfect for wee-ones and for big kids too!

Last but not least, one of my favorite tips to an awesome snack pantry for your family to enjoy is to pick 5-10 brands you love and buy in bulk. No need to have 78 options (I fall guilty too though!) But, if you break it down into bars, chips, pouches, beef jerky, granola bars etc … and keep them separate and organized your kids will easily find what they need and not feel so overwhelmed!

Jalapeño Cheddar Cast Iron Cornbread

Don’t even get me started on how incredible this cornbread is…

Okay, I’m started. And, I won’t stop. This cornbread is the ONLY cornbread recipe you need. I made the recipe up, started with a basic few cornbread staples and let the wind beneath my hungry wings push me. I wanted a cornbread that was the furthest thing from dry. I wanted tender, fluffy and moist cornbread. A few fun additions to this recipe, and BAM – I did it!

We are on day #1 of our first floor renovation, and this cornbread was part of the last meal in our old kitchen. I paired this sensational cornbread with a ground turkey sloppy Joe (I’ll share the recipe soon!) It was so satisfying, perfect for a fall evening.

So, what makes this cornbread SO good – you ask? It’s the can of cream corn you add – with another 1/2 can of drained sweet corn. Oh, and the load of shredded cheddar cheese, OH and the jalapeño juice!

Come to mama….

You can surely make this in another dish, just shorten your cooking time for a 9×13 baking pan, or even less time for individual cornbreads made in a muffin tin!
