A Little Clearer.

I turned 27 last month. Not old. Not too young. Just kind of stuck in the middle of this 3 years till 30 age. We have spent the majority of our 20’s on a roller coaster of figuring out what works best for ourselves. For our kids, for our relationship, for our lives. I think every family, no matter how big or small, needs a constant level of maintenance. Finding the perfect balance of work, play, money, family, and free time is a challenge. This past year we have learned a few things….

1. If it doesn’t happen today, it does not mean it will not happen someday.

2. It’s only a phase.

3. Let it go.

4. Do what works for YOU.

5. Be HAPPY. LIGHTEN UP!!!

1. If it doesn’t happen today, it does not mean it will not happen someday. Whether it be potential job positions, family vacations, buying a new home, or paying off credit cards. We spent far to many years stacking the odds against ourselves. Seeing everything in a negative light. Always wanting the next best thing, instead of enjoying where we were at in that moment of our lives. And once we started breaking things down and simplifying our lives, things became that much easier, and enjoyable. Nothing happens over night. Everything that is meant to happen will… you have to just stick to a game plan. Do not beat yourself up for being in a rut. Everyone is.

2. It’s only a phase. We’ve taken to this saying like nobody could. Maybe it is having 2 boys, close in age that makes challenges arise quicker than an earthquake. But, it has taken us time to not get so paranoid as to what other people think when our kids have meltdowns in public. Or will not let go of sucking their thumb (brody) – Or will only eat certain things. We learned to get over it. We take one day at a time. Our boys are our world, and if we beat ourselves up over every little thing they did “wrong” we would be exhausted, and well, they wouldn’t be kids.

3. LET IT GO. While Dan and I have a lot in common, we also have different tastes in a lot of things. SO, like every couple, we bicker, disagree, get upset, and let it fester inside. TEN years of being together and learning to “let it go” has just worked for us. We do not brush it under the rug… we’ve learned to accept our differences, talk them out, and compromise. Find a common ground where the both of us are happy… It is not letting it go unresolved. It is letting go of the constant who will win this argument idea. There is ZERO point in that!

4. DO WHAT WORKS FOR YOU. We ALL do it. Compare, compare, compare. They have this, they did it this way, they always seem to have it together. So and so forth. It is SO hard not to constantly put yourself on the stand. Questioning every last thing you decide to do. Everyone has different families, different situations, different lives. So do what works best for you and your family. I use to always think, why doesn’t this work for us? How did they get their act together so effortlessly? And I am sure if you were a fly on the wall in others homes that you may envy, you will to see that everyone is working towards the same goals. Just in different ways. Comparing just brings out jealousy and feelings of insecurity. We try our very best to accept things the way they are, and make choices for our lives that work best for us.

5. BE HAPPY. LIGHTEN UP!!! Anyone who knows me, knows that I am nervous nelly. About everything! From food bourne illnesses, to career changes, to my kids running down the pavement. I twitch and shreak over everything and anything. I worry about everyone in my life…during good and bad times. It’s my nature. Thank goodness for Dan – because he is the most laid back guy on the block. He has taught me in so many ways to lighten the heck up. I let people get the best of me. I try to please everyone. And sometimes, you have to learn to say no. Take things day by day. You are not a failure if you don’t accomplish everything you sought out to do. Lighten up, live a little. Drop the laundry, play with the kids.

These are not rules… just my little lessons learned through some stressful times we’ve had these past few years. As husband and wife, and as parents, we will constantly evolve. Try not to get too caught up in stuff that makes you huff and puff. I am always one to get easily overwhelmed, discouraged and out of ideas. And after this past month of selling the house, we have been tested in every way imaginable! Guess these pointers are my way of making life a little clearer for me!

Summer Time.

Summer Time.

It was a great weekend in the – thome – home! And after these past few weeks of summer I am realizing that my blogging has fallen off a cliff.  Not that I don’t care, nor do I not feel like doing it.  BUT, summer is short and sweet… and we are soaking up every last drop of every moment of every day to make it the best summer we can.  So, computers, uploading pics, finding a few hours to blog is just silly right now! I do not know how people who blog FULL time do it.  Well, maybe the pay check helps, but I just believe my boys come first (and the hub), then selling the house… and whatever extra lovin’ I can give to something is sheer bonus.  So my dear diary blog, I will do my best to tend to you this summer.  But just know that the littles and the hub will trump you everytime, especially in the summer.  That being said, here are some pictures from these past weeks…

 

Owen loves two things.  Ears (his own, or others) and his binky.  Last month, we said goodbye to binky and he hasn’t had any meltdowns since.  No binky fairy, or toy trade needed.  Owen for once in his life cooperated 🙂 This is one of the last days with “Bink-Bink”

image-98Dan keeps getting more handsome to me, each and every year.  Nearly four years of marriage, and ten years together total, and he hasn’t lost a drip of being my Mr. Good-lookin’

image-84We went to the Tribe Game last week.  I do not like sports.  On a scale of 1-10, it rates about a zero on the level of importance in my life.  But, being in a house of boys, I know it’ll have to grow on me.  It was in the 9th inning when I turned to Dan and asked which color jerseys our team was wearing.  If that doesn’t show how much I do not pay attention, I don’t know what does!

Wahoo!! Our Encore countertop project is complete, and we love them!

This product is so special, in so many ways.  For anyone who has worn out, old laminate, tile or hard surface countertops, you can transform them in a matter of 3 days! There is an array of colors to choose from which can totally change the look of your space.  AND you do not have to be a pro to get the job done.

I stumbled across this product on a blog I follow, and was stopped dead in my tracks drooling over the shiny black countertops.  Even better, these concrete finish countertops are Eco friendly and scratch resistant! I could not believe this all came from a kit, that the home owners did themselves.  I looked Encore up online, and decided to write into the company to see if they thought their product would be a good fit for our kitchen.  A few days later our very own Encore Countertop kit arrived in the mail, and we were eager to get this counter party started.

I HIGHLY recommend watching the video on their website, repeatedly, the more comfortable you are prior to starting, the better off you will be.  Dan did the first layer of concrete, and I finished the project all on my own.  So ladies, it can be done! It took me four days to complete, instead of three.  More than likely because I had kiddos, and things tend to go on the back burner.  However, the entire process was actually quiet simple and by day 2 it was thrilling to see the change in our countertops.  Goodbye scratches and little dents! Hello artistically finished concrete countertops!

I must say, I panicked during the first few applications.  While spreading concrete on my countertops, I had an “Oh NO! what if this doesn’t come out good?!” – moment.  But after the first layer of black was added, I saw the path it was going down.  A good one.  Here are our before and after pictures…

Before, our countertops were laminate, with a gray/black swirl to them.  Covered in scratch marks and even broken bits and pieces.

And the oogly cracks above filled in with black paint made us cringe every time we look at it.  Home Depot does not sell the replacement pieces we needed, so that was enough to convince us to resurface these counters!

The first 2 coats of concrete adhesive are a little intimidating, in that you’re hoping you do it right/not screw up your counters even more.  But, if you apply correctly, and take the time to sand EACH and every time you are supposed to, it is pretty hard to not get a super smooth surface.  Our only trouble spot was the back splash… more time-consuming in tight corners.

IMG_4814This day consists of 3 applications, each time the consistency of the product gets a little thinner.  Each application took me no more than 30-45 minutes to apply.  And that was even with little rascals needing attention all the time.  So, after each coat completely drying, we followed with smoothing with sandpaper.  The last day was applying the sealer ( 2 steps ) and then a few days of letting the countertops completely cure.  So, our kitchen was definitely out of use for about a week total.  If we didn’t have littles running around we could have used it more, but we did not want to risk all of our hard work being ruined! The final result was impressive… shiny, black, durable, smooth, brand new concrete countertops.  SO glad we took the plunge and did the project, and a big thank you to everyone at Encore! Their customer service is superb and flawless, truly two thumbs up!

IMG_4822See the difference?! I was pretty proud of myself the final day, I really didn’t think a girl with ZERO experience working with any type of concrete could pull it off.  BOO-YAH men!

Let’s keep it simple here.  Bacon is delicious.  Bacon is crispy.  Bacon is unhealthy.  Bacon is addicting.  Bacon makes everything taste better.

Brody wanted to buy some bacon he spotted at the grocery store this week so he could make it for Dad this weekend.  Seeing that our countertops will be getting a facelift, and our oven will be covered in protective wrap, I decided to bake it off in advance.  If you haven’t caught on to baking your bacon in the oven, please do.  Bacon has never tasted so good, and best of all, cook so evenly.  We’ll be enjoying it with our sweet potato hash tomorrow morning, you can find the recipe here:Sweet Potatoes: for dinner & breakfast  And plan on using left overs (if there is any) for B.L.T.’s for our kitchenless dinner!

All you need to do:

Buy thick cut bacon.  We use Market District Smokehouse bacon

Pre heat the oven to 400*   Take a large baking sheet, and place a wire rack on top.  My rack was too big (never could say that before) – so I simply flipped it over so the “feet” were facing up, and the wire rack was able to lay flat.  Line your bacon up on the rack.  The grease will drip down into the pan while baking.  Bake for a total of 20-25 minutes, or until your desired crispness! I let them go for a full 25 minutes, and they were perfectly crisp! Let bacon strips cool on the wire rack, and on top of foil to catch additional grease while cooling.  It will take two racks to do a full batch (a little over a pound) of bacon.   Enjoy immediately, or let cool completely and store in an airtight bag in the fridge for the following day.

Kitchen and Bath.

Good Thursday morning! Ever crave a weekend SO badly it hurts? This weekend couldn’t come sooner.  We have a kitchen countertop project to start tomorrow evening.  It is a three-day process – so this weekend will be full of Frog Tape, baby gates to block the littles, and a kitchen-less house.  By day 4 we should be sick of ordering in meals, but we will have a gorgeous new surface to drool over!  We will be sharing all the details with you guys next week!

Random mommy fact of the day :: Bath time rocks!  Maybe because they’re in one place, at the same time, and getting along.  They are super content/happy in water,  they could stay in the bath until their baby toes look like raisins.  It is a treat to sit on the bathroom floor and just stare at their sweet splash-kissed faces.  Last night Dan was in work meetings and work related events till nearly midnight.  The kids were up since 6:30am and ZERO napping for the entire day, so when 6:00 rolled around I was a bit fearful that bath time would only bring out a screamfest (they’ll know bedtime is near).  And yet, bubbles and water win again! Thank you bath time, for creating happier kids 95% of the time (until mom pulls the plug).

Everyone is passionate about something.  Whether it be surfing, cooking, animals, hot chocolate, or cutting your grass (dan thome).  The array of things each one of us can attach our heart-strings too is never-ending.  Now, in my world, there’s a whole lotta loving going on, with out a doubt.  I tend to over connect with things.  Whether it be people, an errand, a home project,  I do my best and take a lot to heart.
This video on YouTube, via the Ellen show, just about my made month.  Lately, I have been a little off my game.  Between prepping the house, caring for the kiddos, and maintaining what little social interaction I have with the outside world, I have been a  bit overwhelmed and doing my best to keep it all in.  So, when Kristen Bell had a full fledge happy meltdown over a sloth (in the video) – it made me feel totally normal.  Kristen reminds me a lot of myself.  And I can guarantee when all this anticipation of selling the house actually results in selling the house, I will be in fetal position crying as well.

Coffee Cake Muffins

What memories from your childhood give you a good chuckle? Or make you cringe? Or make you smile? The good, the bad, the awkward, and everything in between.   I remember the day I shaved my legs in the 4th grade without my moms permission (bad).  I was never one to have a boyfriend (even well into my high school years) – I remember one guy saying that I was cute, but in a “weird way” (awkward).  Making endless home videos with my cousin, skits that SNL would pay top dollar to reenact (amazing).  Going every summer to Chautauqua, NY with my family.  As kids, we would sometimes call it “Shit-tauqua” being brats that it was kinda boring sometimes … not realizing how precious those trips were.  It’s safe to say that the fondest memories  of my childhood though, were the simplest.  My realization for my love for all things food did not peak until my mid twenties.  However, when I look back on my childhood, some of the best memories I have are the ones filled with family and food.  These coffee cake muffins just bring me back to mornings in my kitchen growing up.  I can visualize the mauve colored kitchen we had, with the beautiful wood cabinets, and darling breakfast nook.  It’s odd that even as a child I appreciated my home’s esthetics.  And when a circle cake pan filled with my moms coffee cake was cooling on the stove, it was sure to be a good morning.   I am sure, nearly 20 years ago, it was more than likely a recipe my mom found on the back of a bisquick box.  Fast forward 20 years later, and you can find thousands of recipes for coffee cake on google.  This recipe was inspired by the one from -PinchofYum- They are far better than you could ever dream up in your head, and can be tweaked in SO many ways.  I use a Trader Joes coconut yogurt for these, but do not panic if you do not live near a Trader Joes.  I am sure a greek yogurt substitute would work just fine!  Make these tonight, and enjoy them tomorrow, thank me later.

INGREDIENTS: makes 12

  • 2 cup unbleached all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 2 eggs
  • 2 containers of Trader Joes Vanilla Coconut Yogurt (sub greek yogurt) 12 oz yogurt total
  • 1 stick butter (at room temperature)
  • crumb filling/topping:
  • 1/2 cup brown sugar
  • 1/2 cup unbleached flour
  • 1/2 stick cold butter
  • 1 heaping tsp cinnamon

**Variations I have used if you want a dairy/egg free option** Same steps : Butter, yogurt, sugar and oil (instead of egg), mix well.  Add the flour, baking soda + powder, salt.  Mix until combined.  Your batter is complete. 

Dairy/Egg free recipe:

  • 2 cup unbleached all-purpose flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1/2 cup of earth balance butter at room temperature
  • 2 containers of Trader Joes Coconut Vanilla Yogurt (12 oz)
  • 3/4 cup sugar
  • 1/4 cup vegetable oil
  • SAME FILLING, BUT WITH EARTH BALANCE BUTTER

DIRECTIONS:

Pre heat the oven to 350* Line a muffin tin with cupcake liners (makes 12)

In one large bowl, with a handheld mixer, mix together the sugar, eggs, yogurt and butter.  Once these are combined, pour in the flour, baking powder, baking soda, and salt, and beat together just until smooth.  Set this bowl aside.

To make the crumb filling & topping : With a fork, in a small bowl, cut together the butter, brown sugar, flour and cinnamon, until it resembles wet sand.

Assembling the muffins: Fill each muffin cup using a small cookie scoop, approximately 1 tablespoon to fill 1/2 way up the liner.  Take 1 Tbsp of the brown sugar crumb and place it on top of the batter.  Once all of the muffins have the crumb filling, take the cookie scoop again, this time a heaping scoop to top of the muffins, bringing the batter to the top of the muffin liner.  Take whatever left overs of crumb filling you have and sprinkle the tops of the muffins.  Spritz the pan & tops of muffins with a non stick cooking spray.  VERY LIGHTLY, just to ensure the muffins will not stick (they are large!) Bake at 350* for 17-22 minutes.  Insert a toothpick to ensure the muffins are cooked all the way through.  Let them cool on a wire rack, enjoy immediately, or store in an airtight container for a few days.

3 Days of Fun.

3 Days of Fun.

When everyone has Monday off, the weekend is just that much brighter.  We consumed ourselves with family, cooking out, pushing back bed times, the zoo, and a little DQ to top the final day off.  It was a fantastic weekend.  Now our sweet boys are lounging on the couch, feeling the aftermath of being completely thrown out of their routine, but I don’t think anyone is complaining!

Brody’s “smile” when he is asked to take a picture lately, is hysterical.  It makes my face hurt watching him give the biggest grin possible.  And Owen, well, this 2 year old will turn any object into a completely new toy.  Corn hole and a slide all in one!

Dan and I actually found a moment to snap a picture of ourselves.  In between Owen having a complete meltdown at Dan’s parent’s house for a few hours.  I think we were both ready to have a meltdown as well.  Oh, the joys of parenting.

IMG_4681Their love for meerkats is growing a little stranger by the day.  First it kicked off with them picking out a meerkat birthday card for their GiGi (my mom) for her birthday.  Nothing like opening up what you expect to be a sweet poem filled card and all you see is meerkats staring back at you.  Once they saw these two holes to stick their faces in, there was no stopping them.

IMG_4677They sat and watched the lions while they ate lunch, and I tried my best not to have a panic attack.  Mind you, the ledge they are sitting on is no more than a foot or two off the ground, and it is the first of many barriers from the lions.  However, in my twisted fearful mothers mind, I pictured the lions smelling their chicken nuggets and bolting it over all the barriers to consume my children for lunch.  Dan laughed.  And had to tell me multiple times to chill out.  So I did, thankful now, because this picture is too cute.

Oh well! A lovely few days of fun with my family.  This week we are cooking up a few new recipes that we’ll be sharing with you (if they turn out of course).  But, most of our time will be dedicated to setting up for our open house this weekend.  Whoop Whoop! SO excited!

Sweet Potatoes: for dinner & breakfast

Sometimes I mean always, your extra time as a parent seems to be non-existent.  Attempting to do things ahead of time is key to keeping things moving smoothly in our household.  So any meal that I can make extras of, or double by any means, I will.  We LOVE sweet potatoes.  Mainly for dinner, as a side.  Being naturally sweet, they do not require too much of anything to make them taste good.  I stumbled across the idea of making a sweet potato hash and thought that would taste fabulous.  My own twists were added, and these delicious potatoes were born.   Making a larger batch allows for you to make enough for a few breakfast portions for the week.  An excellent breakfast option for those with dairy allergies, or vegan lifestyle, seeing that they are not covered in butter like most you’ll come across! Or have them as a side for dinner, and use the rest in the a.m. dressed up with eggs if you please.  I could not stop eating these as they cooled, we were lucky we had enough left over for the morning! By the way –  Sweet potatoes rock.  For many reasons.  They are packed with Vitamin A, fiber, Vitamin C, potassium, and iron just to name a few.  Make them often! An easy, super healthy addition to any plate.

INGREDIENTS:

  • (1) 3lb bag of Organic Sweet Potatoes
  • Extra Virgin Olive Oil
  • Dry Rosemary
  • Salt & Pepper
  • 1 Large Onion, chopped

DIRECTIONS:

Pre heat the oven to 425* Line two medium cookie sheets with foil, and spray with non stick cooking spray.

Wash, and pat all the sweet potatoes dry.  Leaving the skins on (where most of the nutrients are found), cube the potatoes into approximately 1/4 inch chunks.  Easily done by slicing the potato in half, each half in half again, and slicing chunks length wise.  Add all the potatoes to 2 medium cookie sheets lined with foil and spritz with non stick cooking spray.  Next, chop the onion, adding equal portions to each cookie sheet ( 1/2 chopped onion on each sheet).  Liberally pour olive oil over the sweet potatoes and onions.  Sprinkle about 1 tsp of salt, and  1/2 tsp pepper to each tray, add a pinch of dry rosemary to each pan as well.  Mix well with your hands, ensuring everything is coated evenly.  Bake for 40-45 minutes total, at 425* flipping 1/2 way through.

Enjoy immediately, or let them cool and store in an airtight container to re-heat for breakfast.  To re-heat in the a.m., pre heat the oven to 400*, and warm until heated through about 15-20 minutes on a prepared baking sheet.  The perfect time frame to whip up the eggs of your choice!

B – Mac.

Who can avoid a burger print T-shirt when your kids nick-name is B-mac? (like big mac)

I couldn’t.  Nor could I resist trying to snap some pictures of him in it.

This shirt is now in constant rotation in his wardrobe.. and will more than likely be ruined with stains or over washed and shrunken before we know it.

For now, I will adore this little guy in his over the top burger shirt.  Super-size my heart… Brody always knows how to make mine melt.
