Lemon + Dijon Chicken Marinade

Winner winner, chicken dinner.

This marinade for chicken is so mouth-watering, I can guarantee you’ll make this every week.  We use it for full chicken breasts, or cut into chunks for kabobs like seen in the picture above.  Add this chicken to a light pasta, salad, or keep it plain jane on a plate.  Either way, this marinade will become a go to for your chicken dishes.  Using simple kitchen staples, this marinade only uses 5 ingredients and is made in a matter of seconds!

INGREDIENTS:  (for two large chicken breasts ( 1 1/2 pounds ) ) Simply double/triple the marinade depending on the amount of chicken you have.

 

  • 3 heaping teaspoons of Dijon mustard (we use  a Trader Joes brand)
  • 3 garlic cloves, minced
  • 1/4 cup extra virgin olive oil
  • 1 tsp salt + 1/2 tsp pepper
  • zest + juice of 1 lemon

DIRECTIONS:

Whisk all of the ingredients together in a small bowl, or shake it up in a mason jar.  Pour over uncooked chicken in a gallon size bag and let marinade for 30 minutes – 4 hours in the refrigerator.  Cook as you would like.   Enjoy!
