Baked Breaded Eggplant

Coming in hot with a dinner recipe for you guys! The other day I was on a total roll in the kitchen.  Something about the cooler weather + cranky kids drives me directly to my cupboards and keeps me whipping up the goods.  I had this dinner prepped within 30 minutes, leaving only the warming to do + sauce to “make” in the evening.

Dan has been swamped with work lately.  To be honest, I admire that guy like you wouldn’t believe.  Not only does he work full-time [plus some] – he is back to school to finish his degree.  So days are busy with the kiddos, and the nights are even busier.  As a stay at home mom I do take it to heart to try my best to keep the day flowing as easy as possible.  Most days, that is a difficult task.  This recipe made my evening SO much easier – and the hubs and I were able to enjoy a healthy dinner together after the kids went to bed.

The best part of this recipe? It cost me $10.35 to make! Wham bam thank you ma’am.

Eggplant $1.79 a piece ( I got two) Organic Tomato Basil Marinara Sauce $1.79 Organic Breadcrumbs $2.99 Mushrooms $1.99

I had two full sheets of breaded eggplant slices, leaving me enough left over to freeze a ziploc bag full for later use.

Baked Breaded Eggplant
Recipe Type: Dinner

Ingredients
  • Eggplant
  • Eggs
  • Breadcrumbs
  • Garlic Powder
  • Herbs De Provence
  • Salt and Pepper
  • 1 Jar of your favorite Marinara (ours is Trader Joes Tomato Basil)
  • 1 package of sliced mushrooms
Instructions
  1. Pre Heat the oven to 375*
  2. Prep two large baking sheets – with foil and nonstick spray
  3. This recipe is really one you can make your own. I did not measure – it all depends on how big your eggplants are.
  4. Slice the eggplant into 3/4 inch slices – set aside
  5. In a medium bowl, whisk together eggs
  6. In another medium bowl, whisk together the breadcrumbs and seasoning. I used a pinch of herbs de provence, a tsp of garlic powder and a pinch of salt and pepper. If you do not have Herbs de Provence simply use your favorite italian seasonings.
  7. Dunk each eggplant slice into the egg mixture. Let the excess drip off.
  8. Place the egg coated eggplant into the breadcrumb mixture, coating both sides.
  9. Place each coated slice of eggplant onto the prepared baking sheets.
  10. Spritz the tops of the eggplant with nonstick spray.
  11. Bake for 10 minutes at 375* – flip them once, and cook for an additional 10 minutes.
  12. While these are baking –
  13. In a sauce pan, saute the mushrooms with a bit of Extra Virgin Olive Oil
  14. Once softened a bit, add your jar of marinara and keep this warm on the stove top.
  15. To serve, layer the eggplant slices with a healthy dollop of sauce + mushroom in between.
  16. Top with parmesan cheese

You could make this for a large dinner party, by simply adjusting how much you buy.  Add basil on top if you want to give it a  better presentation.  At 8:30 at night, any food, regardless of its appearance is a beautiful sight!

Pumpkin Chocolate Chip Bars

Stumbling across a great pumpkin spice recipe is not a hard thing to do.  Anything pumpkin flavored – whatever the season may be – our entire family usually jumps all over it.  We have pumpkin scented air fresheners, an ocassional pumpkin spice latte and baked pumpkin goods are whipped up more frequently then we would like to admit!

These pumpkin chocolate chip bars are SO easy to make – and even more lip licking good to eat.  We’ve made them twice in one week and finally found the kindess within us to share them with loved ones.  I highly recommend making these for a football party soon – these bars are a cross between a cake bar and a brownie.  The pumpkin spice is subtle and the chocolate chips add the right amount of melted goodness to this dessert.  Did I just call it a dessert? Funny, because I am pretty sure these were consumed at every hour of the day.  These hips don’t lie.

Pumpkin Chocolate Chip Bars
Cuisine: Dessert

Ingredients
  • 2 Cup Unbleached All Purpose Flour
  • 2 tsp Pumpkin Pie Spice
  • 1 tsp Baking Soda
  • Pinch of Salt
  • 1 Cup Room Temperature Butter
  • 1 Cup Sugar
  • 1 Egg
  • 2 tsp Vanilla
  • 1 Cup Pumpkin Puree
  • 10oz Mini Chocolate Chips (We use Vegan Chocolate Chips)
Instructions
  1. Pre Heat the oven to 350*
  2. Line a 9×13 cake pan with parchment paper
  3. In a small bowl, whisk together the flour, pumpkin spice, baking soda and salt.
  4. In another bowl, whisk together the butter and sugar until light and fluffy.
  5. Add one egg, and whisk.
  6. Add the vanilla and pumpkin puree, stirring until it is completely incorporated into the butter mixture.
  7. Pour the flour mixture into the pumpkin mixture and stir until the flour is just mixed in.
  8. Add the chocolate chips and stir them throughout the batter.
  9. Pour the batter into the prepared baking dish and spread into an even layer.
  10. Bake at 350* for 25-30 minutes. I bake mine for 25 minutes for a more brownie like result.
  11. Let cool completely, and slice to desired size – Enjoy!

Bring It On Fall!

Bring It On Fall!

We knew it was only a matter of time before we were the lucky winners of a yard covered in leaves.  Dan and I do not mind raking – but in this yard – while we are raking more are falling and it has turned into a never-ending project.

What do you do when life gives you lemons? Make lemonade.  Or when life gives you far to many leaves to control? Make leaf piles.

15 minutes of raking can buy you an entire days worth of your kids playing together SO nicely.

The excitement and giggles pouring from these kids was absolutely contagious.  The crunch of their tiny feet hitting the piles brought back so many memories of doing this as a kid.

I crave days such as these.  When the boys can have hours of fun.  No t.v. – not begging to play with our cell phones.  Not arguing with each other and mom and dad playing constant referee.  They spent the entire day in the glory of fall.

Bring it on fall! Let there be cooler days.  Cozy nights by the fire.  Sipping hot tea all day long.  Jeans and sweatshirts.  And since I am out numbered in this house, I guess bring on football all weekend long.  You’ll find me in the kitchen whipping up the appetizers.

The time has FINALLY come to share with you all the exciting news !

We (Dan and Abby) officially have our blog at a point where we can help YOU grow your business as well! Deciding to monetize our blog involves a huge jump of faith and a huge time commitment.  I LOVE our blog – it is a part of me that I am very proud of – that started as a way to keep track of all of the craziness and be able to cherish each step along the way.  Slowly, you – our readers started paying a lot more attention to our space and telling your friends and family to join along in our wild journey.  We could not be more grateful for that.  Having a sense of community online may seem strange to some, but for blog lovers such as I, it is a dream.

There are SO many blogs out there.  I am preparing a list of my favorites for you guys to scroll through and I know that you will be just as smitten with who I follow.  I wanted this step to be an organic one.   Honestly, as a mother and wife I recognize that my blog has potential – and while that may seem terrifying to me – I know that with my fabulous readers we can all join together and bring out the best in one another.  So, we are looking for sponsors!

Challah French Toast Sticks

Oh how we love breakfast in this house.  You all know that – Take a look at my recipe archives and the majority of the list consists of tasty creations to brighten your morning.  Convenience is always key for me.  Getting into the routine of getting Brody out the door and Owen ready in the morning is quite a hustle – all while getting myself out of pajamas and looking human is crossing the line of hilarious.  Making sure they get a breakfast that is filling and appealing to them all in one can be such a challenge.

Our trick to make mornings smoother is the obvious – organization and preparation.  I love preparing breakfast the night before.  Call me crazy, but even during a mid-dinner rush I will whip up something to have ready for kids in the morning.  It makes me feel way ahead of the game! All I have to do is wake up and reheat or directly dish them out what I have made.  This makes for one happy momma and two lucky kids.

These challah french toast sticks top the charts for a breakfast favorite around here.  This recipe makes enough servings for a family of 5 with generous portions.  They warm through so well in the microwave – If you have never used challah bread for french toast yet, you must get to the grocery store today!

These french toast sticks are made in the oven, so simply slicing the bread, dipping them into the egg batter and baking them all together is all it takes.  Not having to sit and flip individual pieces of french toast really makes the entire process that much more enjoyable!

Challah French Toast Sticks
Recipe Type: Breakfast

Ingredients
  • 1 Loaf of Challah Bread
  • 8 Eggs
  • 1 Cup Soy Vanilla Milk (Or Cows Milk + Add a tsp of Vanilla)
  • 2 tsp Cinnamon
Instructions
  1. Pre heat the oven to 375*
  2. Line a baking sheet with parchment paper
  3. In a medium bowl, whisk together the eggs, milk and cinnamon
  4. Slice the challah bread loaf into 1 inch slices. Cut each slice of bread into 2 – 3 sticks.
  5. Dunk each stick into the egg batter, letting it soak up the batter.
  6. Place each french toast stick onto the prepared baking sheet and spray the tops with nonstick spray.
  7. Bake at 375* for 14-16 minutes, until they take on a golden hue on the edges.
  8. No need to flip them, just let them bake!
  9. Serve with syrup and if your feeling fancy top with powdered sugar.

Make these for your little ones this week – seriously they will love you for it.  Keep the sticks in a ziplock bag in the fridge once cooled if you’d like to make them the night prior, making school mornings that much easier!

Family of Five.

Family of Five.

There are a few things in my life I am certain that will never happen.

Win the lottery. Sky dive. Own a cat.

The funny thing about life though is that sometimes you get tossed a card that you have to turn over and face.
That card we were so lucky to be tossed? MICE. Yep – read it and cringe all at once folks. We had a few mice in our basement when we moved in – obviously our house was in bad shape when we purchased it, so while the mice were an unpleasant find, it was not shocking by any means.
Traps were placed, a few (aka – 16) were caught, and we were feeling pretty good about defeating the mice mafia in our basement.

Last saturday I woke up to do my usual routine of getting breakfast ready  and wipe down the kitchen.  What looked like to be a few burnt toast crumbs on my clorox wipe became a quick realization that they were mouse turds. Lord help me. I wanted to cry — I am a clean freak – so the fact that they managed to get onto our countertops made me want to run for the hills.

We flipped our house upside down that morning – discovering a few more mouse presents along the way.  It wasn’t even a an hour later until Dan and I locked eyes and mentioned adopting a cat.

Having a woodsy backyard, and living in an “older” home – we are sure that more will come down the road. Having a feline friend in the house will at least hopefully get them at bay.

Cat people we are not. Let’s make that clear.

With Owen’s dog allergy – a pup will not be an option for a very long time. We were 100% okay with being pet-less people for a while. We chatted all morning/afternoon weighing the pro’s and con’s of bringing a cat into our family. What if it is really skitty? Hates people? Hisses or claws at the kids? Marks the house + smells the previous owners cats?

For some odd reason all of these negative thoughts melted away and we hopped into the car with the boys to take a look at some kittens to see if one would be the right fit.

Her name was Clementine.

She was in her foster’s arms and purring like a race car.  I hesitated to hold her.  Not wanting to get attached to the first cat I held – but within ten minutes she was in my arms and completely in my heart.  Her disposition was so sweet – calming infact.  She loved the boys – even with their wild energy circling her seemed to enjoy the activity.  She has the most gorgeous coloring.  Mainly white with swirls of orange and black.

 It was not long before we knew she was the perfect fit for our family.  We did not need to look at any other kittens – she was the first and only one we wanted.

We adopted her within an hour later and the boys were over the moon about their new family member.  Never in a million years did I envision our family with a fifth member being a cat – but we are extremely happy with our addition.  Since we have brought her home not a mouse turd in sight (wahoo!) and her personality keeps getting better and better.  She loves to cuddle, play and sleep.  She has been a sweet surprise.

Now I am a bit fearful I will turn into some crazy cat loving lady – with cat knitted sweaters, six liter boxes and that stinky couch in the febreeze commercial.  But, for now I will still maintain my OCD ways of cleaning the house – all while enjoying this little girls company.

The best part? Her new name — Meet  Olive Oil.

It’s Not a Mirage…

It’s Not a Mirage…

HELLO EVERYONE! My word – it has been way to long since The Thome Home has posted anything at all.  Thank you all for being so patient with me during this blog face lift.  While the site is not complete, and there are plenty of kinks for me to figure out I wanted to getting back to rolling out the goodies and work out the kinks in the mean time.   The new blog will be far more organized + user friendly, so hang tight!

It’s not a mirage, that hot mess right here is was our garage.

Months of constant renovations gathered into one hot box of stinky mess.

Each week it got worse.  Each time my feet stepped out of the back door I wanted to run with my eyes closed to my car.  If I did that though, I would have been sure to of gotten impaled by a sharp object – so tip toeing around all of the junk like a ninja became my way of transporting myself out of this junk yard!

Our garage is LARGE.  I never thought it would turn into a room we wanted to finish within the first year of living here.  But, having an attached garage seemed to feel like just as worthy of a room as any other in our house.  The first room people see when they come over, the entrance to our home and an area that needed to feel a lot more welcoming.

Dan LOVES this garage, possibly more than me.  His desire to park his sports car in twenty years is weighing heavily on his mind – so he wanted to give this room an affordable lift and fast.

First we cleared out the entire space and gave the walls a fresh coat of paint and the ceiling received a fresh white coat.  The rest was simply a process of throwing away whatever we did not see use for! Sounds easy – but the fact is, we are constantly working on things at this house so there is a need for nearly everything it seems sometimes.  But away most went, and the rest found as neat of a home as possible off to the side.

We have a TON more organizing to do – each item in here really needs a place to call its own.  We are falling into the “shove it to the side” way of cleaning up.  Glad that we at least gave this space a whirl before the cold snap hits Cleveland!

Now What?

Now What?

Two weeks ago Dan woke up with the genius idea to role play for the day.  Lumberjacks we became in a matter of hours, taking down 7 trees in total leaving us feeling euphoric over our accomplishments.

Since then, we have spent far too much time with the fallen trees.  What started out as excitement, quickly turned into one big ol’ pain in the booty.  I’m talking bounce a quarter of that big ol’ pain in the booty.

We still have 16 more trees to take down, but if you look close enough you can tell where we took the trees down, allowing for a little breathing room and a lot more sunlight already!

We have tree trunks and branches EVERYWHERE.. and this is even after 2 weeks of on and off clean up.  Yes, we’ve considered having someone to come out and chip this in just minutes.  But – as DIY crazy as we are, we figure the time and patience it’ll take to complete this project will be worth it.  We’re saving all of the wood for our fireplace this winter, and the branches we are putting into a waste management bag.  Eventually, we’ll have a lot more open space …

For now, trimming off each individual branch off of the tree itself is really time consuming.  I trim away while dan cuts the logs for the wintertime.  The kids just play play play and we all stay super busy!

Turns out we could have hired these kids for clean up all along 🙂

Dan has been tackling a lot more landscaping issues in between the tree – time.  We are still ripping out ivy beds + getting ready to hopefully have a clean dirt to fill with grass seed this fall.

What’s That Face For?

What’s That Face For?

( Stumbled across this gem in my archives.  This post could not be more true at this period in our lives.  Adjusting Brody going back to school + having one on one time again with Owen in the mornings. )

 They can throw it all at you, like a group of improv students at a late night show.  Except for we feel more like the students.  As parents learning the in’s and out’s of your kids personalities can be challenging.  Certainly when each child has characteristics all their own.  Balancing everybody – trying your best to make sure everyone is in a good mood.  Handling each scenario with a slightly different approach for each child, whether you realize you do it or not.

These boys have given us a run for our money lately.  As they get older, wiser and sassier.  How did their vocabulary suddenly match up so well with their attitudes.  They know exactly how to dish it out.

Brody’s First Day of Kindergarten.

Brody’s First Day of Kindergarten.

Brody had his first day of kindergarten yesterday!

This handsome boy seems pretty excited about starting at his new school, and it is helping mom and dad adjust much easier to our new area.

His teacher reported that there were a few tears at first, which quickly turned into him being a brave boy, so lets hope that bravery keeps rolling throughout the school year!
