Hey, Neighbor!

Picture this –

Okay – things may have gotten weird here.  But, what can I say!

Our neighbors right now have a few trees and bushes that are breath-taking.  I could not help but try to snap a few pictures of my ever-growing boys! Cars looked as they drove by, questioning my vision probably – but I have to admit, I got a few good ones!

IMG_1639I really need a photography 101 class asap — not just because I’ve always loved taking pictures (hence the blog) – but I find myself caring more about the quality — and wondering what I could be doing to improve it.  Maybe I’ll scrape some free time from the husband — seeing that is what he went to school for 🙂 For now, snapping pictures of my wiggling, non cooperative kids will work for me!

This blog has been packed with family stories + recipes this past few weeks and very little DIY.  That’ll change these next few weeks guys – we’ve been busy redoing bathrooms, painting rooms (again) and starting a kitchen reno in the weeks to follow! I can’t forget to mention that tomorrow is the day we remove the rest of the trees from our backyard – (say a prayer please).  So, we’ll have plenty of awesome things coming your way!

I cannot wait to keep this up! It is such a treat to get something in the mail that brings so much joy into your life.  As a mom, we rarely treat ourselves (besides my daily starbucks habit) – I NEVER buy jewelry, ever, so this box was such a perfect addition to my lack of mommy style! Just what I needed!

I cant wait to share this with new mommy’s .. for baby shower presents … or for a mom that I know could use a pick me up! Thank you Natalie and Mandy, really, you girls out did yourself! Any help you ever need I’d hike my tush to Charlotte any day!

Oh. My. Crab.

This dip is no joke.  Not for the faint of heart – and definitely for those who are seafood lovers.

At our old house, we had a family owned chinese restaurant that we ordered in every once in a while.   I love making home made chinese food!  In fact I prefer our version(s) over take out.  But crab ragoon is one of Dan’s favorite things to order and I never quite took the plunge to make it at home for him.

Once I stumbled across the idea of making a crab ragoon dip, I knew it was meant to be.  A dip – not individually fried stuffed wontons = genius.  A dip I could tweak again and hope to make it a bit healthier.

I should have never made this dip because words could not express how delicious this dip turned out!

I made it in the morning, kept it in the fridge until I was ready to put it into the oven and serve.  I love dishes that can be made a head of time, making entertaining effortless.  Snapping a picture at my in-laws before I burned my tongue being the impatient food grub I am – scooping a taste as it was still bubbling hot.  My tongue may still be repairing but it was SO worth it.

This crab ragoon dip is packed with crab – it is rich, and decadent.

  A lot of recipes for crab ragoon dip call for mayonnaise.  Which makes me want to gag thinking about eating anything greater than a knife spread of mayo in a sitting.  So, as always, I swapped it out for greek yogurt.

I brought it to a fish fry we had at Dan’s parents and it was gobbled up before dinner time.  It was plenty to feed a crowd of 10-12 people.

Crab Ragoon Dip
Recipe Type: Appetizer

Ingredients
  • 8oz cream cheese
  • 3/4 cup greek yogurt (plain)
  • 1/2 cup sour cream
  • 2 Tbsp lemon juice
  • 1 tsp Worcestershire
  • 1/4 cup parmesan cheese
  • 1 cup mozzarella cheese (half for inside of dip, other for topping)
  • 16oz crab meat (I bought canned crab meat)
  • 1 tsp garlic powder
  • pinch of salt + pepper
  • Few dashes of hot sauce
  • 2 Tbsp chopped chive for garnish
Instructions
  1. In a medium bowl, mix together the cream cheese, yogurt, sour cream, lemon juice, garlic powder, Worcestershire, hot sauce and salt and pepper.
  2. Once that is fully incorporated stir in the crab meat and 1/2 cup mozzarella cheese –
  3. Add this mixture to a 8×8 baking dish – top with the other 1/2 cup mozzarella cheese
  4. At this point, you can either put it in the fridge if you’ve prepped the dip hours prior to a party.
  5. OR –
  6. Bake at 375* for 30-40 minutes, or until the dip is hot and bubbly and the cheese gets a golden touch
  7. Garnish with chopped chives and serve with tortilla chips

Olive Oil’s Nest.

Olive Oil’s Nest.

We introduced you to our fifth family member a little over a month ago.  Olive Oil has been quite the addition to our family! She has shown us so much love in such little time.  She has the patience of a saint with the kids and their friends who chase her in circles all day long.   I’ve fallen in love with her so much (as have the rest of the fam) that I nearly adopted a second kitten last weekend — Dan was not amused that my cat lady capabilities seem to be growing.

What have we learned so far about being cat owners?

Kitten gas is the worse.  Or at least our cat reserves a tank of stank within her to release in the worst moments.

They are SO self-sufficient.  Put some food out, clean their litter box, they’re good to go.

Keeping their nails trimmed will result in less ripped furniture as well as not finding your cat stuck to screen doors.

What have we learned about this sweet Olive Oil in particular?

She will cuddle with anyone, almost to a fault when it is not welcome.

She likes to bite her momma (me) –

Do not leave bread on the countertop, she will eat through the package and eat the bread.

She loves water – sits and watches the boys take baths and even jumps in once the tub has drained.

She talks a lot.  Right at 5:30 every morning.  We wake up to her nudging our faces with her stinky salmon breath.

She will sit in an open window the entire day.

She purrs like no one is listening.  So loud.

I call her a freak of nature, in the nicest way possible.  She acts like a dog – every visitor has said so.

We find her in the strangest of places all of the time — the latest find was within the wreath we took down to paint our front door (for the 3rd time) –

Overall, we are SO glad we chose to adopt her.

Sloppy Janes

I remember a few dishes clearly that my grandparents would make or constantly have around their house.

My mom’s mother  I remember things like german chocolate cake (had it for my birthday once, it stuck with me forever)  stews and popcorn.  My grandma would make bags upon bags of popcorn in baskets lined with paper towels for all of her grandkids to split, and pour melted butter over each batch, as a kid, it was a real treat.

My father’s mother I remember fish frys (which are hands down the tastiest seeing my grandfather is a fishermen), meat sauce with pasta and sloppy joes seemed to always be a staple for dinner.  I can still remember the table we would gather around with the big pot of meat sauce and pasta in the middle.  Both grandparents with at least 15 + grandchildren – so the snacks and meals were always enough to feed a  large crowd.

Sloppy joes may be messy, but the flavors are something to remember.

 I started making this version a few years ago, when Kelsey Nixon came on the air on the Cooking Channel and made this version of sloppy joes for the one and only – Martha Stewart.  Very daring of her to serve such a sloppy dish to the queen of crafting, but after making this it is no wonder why she did! This recipe has stuck with us over the years, constantly rotating through a dinner of choice.  It is DELICIOUS!

It is made with ground turkey – so if you are not into that, go to ground  beef.  But, I highly recommend using the turkey.  I tried the recipe once with ground beef, in fear guests would not enjoy the ground turkey and well, the flavor was not as good – all you tasted was the beef.

This recipe makes a huge portion, perfect for a family party.  We like to make it, split it in half.  Saving half for the fridge for dinner the next day, and the other half we freeze to use another night.

I tweaked the original recipe just barely to fit our tastes.

  With the chilly days creeping up on us quickly, these sloppy janes will be sure to warm you up!

Recipe Type: Dinner

Ingredients
  • 2 green peppers – diced
  • 2 red peppers – diced
  • 1 large onion – diced
  • <span class=”mceItemHidden” data-mce-bogus=”1″><span class=”hiddenSpellError” pre=”” data-mce-bogus=”1″>3lb</span> ground turkey</span>
  • 1 tsp garlic powder
  • 1 heaping Tbsp paprika
  • <span class=”mceItemHidden” data-mce-bogus=”1″><span class=”hiddenSpellError” pre=”” data-mce-bogus=”1″>14oz</span> crushed tomato</span>
  • <span class=”mceItemHidden” data-mce-bogus=”1″><span class=”hiddenSpellError” pre=”” data-mce-bogus=”1″>28oz</span> tomato puree</span>
  • 1 Tbsp garlic powder
  • 1 cup ketchup
  • 4 Tbsp brown sugar
  • <span class=”mceItemHidden” data-mce-bogus=”1″>3 Tbsp <span class=”hiddenSpellError” pre=”Tbsp ” data-mce-bogus=”1″>dijon</span> mustard</span>
  • 2 Tbsp apple cider vinegar
  • <span class=”mceItemHidden” data-mce-bogus=”1″>2 Tbsp <span class=”hiddenSpellError” pre=”Tbsp ” data-mce-bogus=”1″>worcestershire</span> sauce</span>
  • Salt and Pepper
  • Extra Virgin Olive Oil
Instructions
  1. Prep your veggies – dice the peppers and onion.
  2. Warm a dutch oven or large pot with a few tablespoons of olive oil, saute the veggies with a pinch of salt and pepper until barely softened (5-10 minutes)
  3. Add the ground turkey, drizzle of olive oil, 1 tsp of garlic powder + heaping Tbsp paprika – add pinch of salt and pepper.
  4. <span class=”mceItemHidden” data-mce-bogus=”1″>Stir everything together, and let the turkey brown until <span class=”hiddenGrammarError” pre=”until ” data-mce-bogus=”1″>its just</span> cooked through. (10-15 minutes)</span>
  5. <span class=”mceItemHidden” data-mce-bogus=”1″>Next add the sauce to the meat — crushed tomato, tomato puree, ketchup, brown sugar, <span class=”hiddenSpellError” pre=”” data-mce-bogus=”1″>dijon</span>, apple cider, garlic powder and <span class=”hiddenSpellError” pre=”and ” data-mce-bogus=”1″>worcestershire</span> sauce.</span>
  6. Add a good pinch of salt and pepper again – stir everything together.
  7. Bring to a boil, reduce to a simmer with lid on low for 45 minutes –
  8. <span class=”mceItemHidden” data-mce-bogus=”1″>I keep <span class=”hiddenSpellError” pre=”keep ” data-mce-bogus=”1″>ours</span> on the stove top during football games, or in the oven on low for entertaining!</span>

Light A Candle.

October 15 – National Pregnancy and Infant Loss Awareness Day.

It isn’t strange at all to think that it has been nearly a year since I miscarried.

I wrote about it here which was one of the most difficult moments to open up about our experience.  I guess I was afraid more or less about being judged.  Miscarrying at 7 weeks is early, so was I entitled to feel that large of an impact of loss like I did? After publishing that post, those who contacted me through comments and email touched my heart and brought tears to my eyes.  I no longer felt alone.

There are so many women that I know personally that have walked through the difficult journey of losing a pregnancy or an infant.  It is one that I had hoped to grow stronger from – but I have realized this past year that I tried far to hard early on to put that moment in the past.  I found myself randomly driving, thinking about that day .. or the excitement that built up the weeks prior to the miscarriage.   The tears would start flowing, and I found it hard to stop.

We wanted so badly to bring another child into our family – and during the first month or so after the miscarriage I felt compelled to try again – with high hopes, a better ending.  Then the fear set it.  With each month passing I found myself growing more and more fearful of the idea.  I started to develop awful anxiety.  Which was not a surprise to me, seeing being anxious was always a part of who I was.  But, this anxiety was different.  I felt like my life was on pause.  I miscarried – a few short weeks later Owen was sick in the hospital – fast forward a few months later to Brody’s diagnosis with IBD and weeks and weeks of being in and out of the hospital.  We bought our “dream home” – and in over our heads in renovations.  Everything was piling on and I felt suspended.

I never really talked about the miscarriage to anyone.  If it were brought up, I would say silly things like “When it’s meant to be it’ll happen” … just to stop the conversation.   There was not a way to convey to people how I was really feeling  – I felt overwhelmed with everything happening in our personal lives.  Our boys were sick – moving to a new city – piling on extra things to do on my list in between taking care of the kids.  I quickly found myself in a huge rut.  I have always been a girl who said yes to everything – making my to do list bigger than me, it did not take long until that list took me under.

I found myself pulling back from friends, and social situations.  I started to develop REALLY awful anxiety attacks that would come and go at the strangest of times.   I shut down, I did not want to talk about how I was feeling, I definitely put on an act.  Until almost two months ago when I woke up at 4:00am to my heart feeling like it was jumping out of my chest.  Trying to relax and go back to sleep – I could not quiet shake the feeling.  By 7:00 I found myself collapsed on the living room floor and unable to catch my breath.  My hands and legs went completely tingly and numb.  They cramped up so tight –  Dan immediately called 911 – and as soon as the paramedics came they knew it was a massive panic attack.

I, of course, was mortified.

 I was so embarrassed that my body took full control and it got THAT bad.

 It took it getting to that point until I realized just how much things I went through within this past year really took its toll on me.  No, my miscarriage did not destroy me.  But not dealing with it correctly definitely wore on me over the months to come.  I have always wanted to large family … for my kids to have lots of siblings.  Seeing friends and family get pregnant did not make me sad at all – I was actually super excited for them – and wanted that for myself as well.  But then the thought of losing another pregnancy took over.  I could not quiet swap it out to positive thinking.

 I know right, it’s not like I lost back to back pregnancies.

I guess I just felt like it was my body telling me to stop trying.  So I felt defeated.

Since my attack I have come leaps and bounds with my anxiety.  I am really proud of myself that I have much greater understanding of why and how I am feeling.  That I do not need to be embarrassed or ashamed, or feel that I have to validate my feelings.  More importantly I wanted to share this story with you guys because learning that I was not alone and understand that what I am feeling is OK and normal has helped me cope so much better.

Our miscarriage will never be forgotten.

For those who are trying to start a family of their own, keep trying.

For those who have lost a pregnancy or an infant, I pray for you all.

It is not an easy path to walk.

 I hope we all can be a little more open-minded about what others have experienced and are going through.

Light a candle tonight, to remember.

Buckeye Balls

Ohioans are extremely familiar with this tasty treat.  Buckeye Balls are delectable balls of peanut butter carefully dipped into chocolate and enjoyed by many throughout the holiday season.  Does it really have to be a holiday to make these? I think not.  However – the original recipe that goes around our table is not the healthiest.  So, I set out on a quest to make one of my favorite combinations (peanut butter + chocolate) a bit less guilt inducing and dairy free for Owen.  So, if you have little ones with dairy allergies this would be such a treat!

My first recipe I tried out was extremely adventurous – I should have known by the ingredients alone that this was bound to take a terrible turn, but I forged on in hopes that the end result would be great.  A few spoon licks later and I could not erase what I had made off of my taste buds – and not in a good way.  Thank goodness for tasting as you go! Unfortunately there was no saving that recipe – but the craving for that combo was still stronger than ever.

Quickly I realized trying to omit the powdered sugar just wasn’t an option.  At least for our house.  I needed to find a way to swap out certain ingredients for a few healthier choices and simply lower the powder sugar requirements.  No more than 10 minutes later a beautiful, mouth-watering buckeye ball was created.  Better than any other I have ever had.  So good that it turned Brody into a peanut butter fan.

Most recipes for buckeye balls call for melted butter and shortening.  Wanting to cater to Owen’s allergies (dairy free) – I swapped these two ingredients for pumpkin puree and coconut oil.  Also using dairy free chocolate chips were a delicious twist (by the way, these chocolate chips taste better than most, highly reccomend it!)  The recipes I have made before require 4 1/2 cups of powdered sugar, I used 3.  So while these still have a bit of a guilty factor you can feel awfully good about getting a dose of pumpkin and coconut oil into your system!

I’ll shut up and stop the talking about these balls – and show you the recipe so you can make them yourself!

Buckeye Balls
Recipe Type: Dessert
Author: Abby Thome
Serves: 35
Ingredients
  • 1 1/2 Cup Creamy Peanut Butter
  • 1/2 Cup Pumpkin Puree
  • 1 Tbsp Organic Coconut Oil
  • 1 tsp Vanilla
  • 3 Cup Powdered Sugar
  • 10oz Mini Dairy Free Chocolate Chips (Regular Chocolate Chips will do)
  • Pinch of Sea Salt
Instructions
  1. Prepare a large cookie sheet with parchment paper
  2. In a large bowl, stir together the peanut butter, pumpkin puree, coconut oil and vanilla
  3. Stir in the powdered sugar – use your hands to knead the dough until it is completely absorbed (this will help break down the coconut oil too)
  4. Roll roughly a tablespoon of the peanut butter dough into a ball and place onto cookie sheet
  5. Continue to get your roll on until all of the dough is used
  6. Place into the fridge for 1 hour
  7. Melt the chocolate chips in a glass bowl in the microwave in 30 second increments. Each time stirring in between. It usually takes 3x until there a few chips not melted. Take the glass bowl out, and let the warm melted chips melt the rest. (Ridiculously easy way of melted chocolate without a double boiler)
  8. Add a pinch of sea salt to the melted chocolate, stir it in
  9. Take the peanut butter balls out of the fridge, and dip each ball bottom into the melted chocolate
  10. Traditionally, you dip them almost to the top, I prefer half way, and finishing with a drizzle – Do what your heart desires
  11. Place the cookie sheet back into the fridge until the chocolate hardens – keep in fridge until ready to serve – or enjoy them throughout the week!

Remember the days when you were excited to get a note slipped to you in class?

Fast forward a few years later and receiving the nicest thank you note in the mail – or a sweet postcard from a loved one.

 Fast forward to today.

 When greetings and thank you’s come in the form of a vibrate or ring on your phone.

When snail mail has dwindled down to wedding invites, and baby showers.  These days it’s not uncommon to get a birthday invite through an email.  Not to say anything is wrong with that, because convenience really is key now-a-days.

I just want my kids to understand that the easy way does not measure up to being the thoughtful way.

How do I instill this into my kids?

Well – I’ve started by showing them the excitement in receiving mail.

We have used a few subscriptions in the past – and still do – and the kids just love seeing what mom and dad have coming in the mail.  So, when I came across Little Passports , not only was I angry I did not come up with this idea first – I was thrilled to see how affordable and amazing of a product this would be for my boys!

Little Passports  is a darling concept of two friends Sam + Sofia that travel the world or the USA and send back “explorer kits” to your little ones! There are two options, the World Edition and USA Edition (you can pick one or both) each box is filled with things to teach your kids about that country or state that Sam + Sofia visited.  What could be better than your child being able to learn about the world right in their own home? To broaden their knowledge of different cultures and learn fun facts!

With the holidays right around the corner,  Little Passports would be a great gift to give – whether it be for your grandchildren, nieces or nephews or your own little ones.  Even for a birthday party gift – giving a child something to look forward to after all of the birthday present hype goes away! Personally, I think this is the perfect surprise to give to my boys at any time of year.  Nothing beats quiet time when they are completely engaged in a new project!  The gift that keeps giving month after month!

I look forward to the boys opening up their first box and diving into a totally educational experience.  Helping to make learning fun for them and receiving a new country or state to learn about each month will keep the excitement rolling!

I am completely smitten with this concept and cannot wait for our boys to go on their first adventure!

Skinny Buffalo Chicken Dip

Skinny Buffalo Chicken Dip

If you could win a jackpot for bringing the best appetizer to your next party, this one would be the winning ticket.  No joke folks – this skinny buffalo chicken dip left my mouth watering for more.  I have never seen a dip get scooped up so quickly.   It felt so good to know that this very dip was made with swapping out some more “waist friendly” ingredients!

Now – don’t jump to conclusions.

 There is still cream cheese and plenty of hot sauce so this would not be on the healthy appetizer list.

Other recipes call for sour cream, this recipe uses greek yogurt as the substitute (cannot tell the difference, trust me).

 But, let’s get real.  It’s football season – and when the weather is cold and the game is on – you want comfort food.  I am pretty sure a few curse words were said as people munched about its goodness.  It’s okay – I am not offended – this dip made me want to curse too.

These pictures are of the dip directly out of a piping hot oven.  So don’t mind the hot sauce oozing on the sides prior to getting mixed it.  And if you don’t mind, right on, I’m right there with ya.  There was no time letting this dip cool – my family was anxiously awaiting its arrival to dig right in.

Fair warning, this dip does have a kick to it.  So if you can’t handle the heat – simply lower the amount of hot sauce.  I recommend using the full amount though – nothing beats a buffalo chicken dip with a kick.

Skinny Buffalo Chicken Dip
Recipe Type: Appetizer

Ingredients
  • <span class=”mceItemHidden” data-mce-bogus=”1″><span class=”hiddenSpellError” pre=”” data-mce-bogus=”1″>8oz</span> reduced fat cream cheese</span>
  • 2 cup greek yogurt
  • <span class=”mceItemHidden” data-mce-bogus=”1″>2 cup skim <span class=”hiddenSpellError” pre=”skim ” data-mce-bogus=”1″>mozerella</span> cheese</span>
  • 1 cup hot sauce (we use Franks)
  • 2 Tbsp ranch seasoning
  • 4 cup cooked shredded chicken
  • 1/4 cup chopped green onion for garnish
Instructions
  1. <span class=”mceItemHidden” data-mce-bogus=”1″>First step – cook your chicken! However you like. I marinade all of my chicken with a bit of <span class=”hiddenSpellError” pre=”of ” data-mce-bogus=”1″>dijon</span> mustard, garlic powder salt and pepper, extra virgin olive oil.</span>
  2. I saute my chicken to get a nice brown crust, then put my chicken breasts in the oven at 375* for 25-30 minutes until cooked through.
  3. Once chicken was cooked, I simply slice and chop it up into tiny chunks and set it aside.
  4. <span class=”mceItemHidden” data-mce-bogus=”1″>Pre heat the oven to 400* Spray a 8×8 baking dish with <span class=”hiddenSpellError” pre=”with ” data-mce-bogus=”1″>nonstick</span> spray</span>
  5. <span class=”mceItemHidden” data-mce-bogus=”1″>In a large bowl, mix together the cream cheese, yogurt, <span class=”hiddenSpellError” pre=”” data-mce-bogus=”1″>mozerella</span> cheese, hot sauce and ranch.</span>
  6. Finally, mix in the chicken.
  7. Pour the dip into the prepared pan and bake it at 400* until the dip is bubbling hot.
  8. Take out, garnish with the chopped green onion and serve with chips or celery sticks for dipping!

This dip needs stirred prior to serving and sets up SO nicely! If you’re lucky you may some left overs to stash for another day, but don’t count on it!

Our Zoo Animals.

Our Zoo Animals.

After 3 long days of Brody being under the weather we had to shake things up and take a trip to the zoo! We haven’t been ALL year – which is so unlike us.  We use to frequent the zoo 2x a week – the kids love it, and Dan and I get a good workout in with all of the walking.

This past summer though we were sucked into the fixer upper vortex and heading to the zoo took the back burner.

 This visit was a surprise and made the kids so happy –  We LOVE the Cleveland Metroparks Zoo!!

Brody + Owen are obsesed with their zoo maps.  First thing they grab when they walk into the entrance, and they look at them the entire time.

Brody kept saying to us “People are going to think I play for the browns (giggles) but I’m just wearing their hat!” He thought it was hysterical!

The lions are always fascinating and terrifying at the same time.  Regardless of the barrier I am always convinced they’ll smell their snacks and leap over the threshold.  Seriously folks – I cringe the entire time as the boys Ooh and Ahh.

Everytime the boys run in a public place (acceptable or unacceptable) they say “Mom – we’re exercising!” Figuring Mom can’t say no to that!

How sweet are giraffes? There are two new babies at the Cleveland Zoo, we were not lucky enough to catch a glimpse – always a good reason to come back soon!

IMG_1440The colors of fall are intoxicating.  If I knew how to keep plants alive for longer then 5 days I would have my entire house and yard covered in them.  I’m working on my green thumb — with each passing plant.

It was the perfect day to visit the zoo.  You would have thought it was closed it was that quiet – which made it feel like it was all ours.

Ooh that face.  Words cannot describe what a good boy Owen has been lately.  He has always been our “tester” – pushing the limits, throwing temper tantrums and making a scene.  But something clicked this past summer and we could not be more proud of what a big boy he has become.  We enjoy his fiesty side though – so teaching him simple boundaries seems to work for us lately.

And this kid – pretty certain he turned 8 instead of turning 5 this year.  He is LOVING kindergarten.  Becoming a crazed sunday football fan just like his daddy and cracking us up with his older then his age mentality.
